      Born and grew up in Mexico! I have to said that anytime I go on vacations in my own country I get to experience how amazing and diverse is my country. That’s why our country has one of the best cuisines in the world. I wish more people even Mexicans get to explore more of what our country has to offered.

    Gonzalo is a champion, what he does is epic and we need more people like him. When he explained his reasons why, his message stuck with me, had to listed few more times, so simple yet so powerful. Speaking of your own farm back in Wales I would suggest looking into Charles Dowding do-dig gardening. What he manages to grow in his backyard with little effort is mind blowing.

    This video was pure pleasure to watch, Gaz and Tom! Beautifully shot and edited. Gaz, your warmth and personable demeanour puts people at ease, along with your complimentary remarks and gratitude (this holds true for Tom, as well, I’m sure). But, what lovely families you met and learned from. The organic farmer is doing incredible things for his family and community. How nice that you followed your awesome dinner with a visit to the family which made the wonderful pottery used at the hotel’s restaurant. I do hope they made their trip back to Wales intact. Looking forward to more of Mexico🇲🇽 !

    Wow. I'm lost for words. The people, the farm, the pottery and rustic cooking. I know with absolute certainty now that I must visit Mexico as a vegan, my only fear is that I may never leave. This series is incredible Gaz, you have shown a great deal of respect towards people's traditions and culture and it has made this food series all the more special.     I currently live in Yucatan, Mexico. There is another accidentally vegan mayan dish that uses ibes. Its called Toksel. The ibes are boiled and strained then burning hot rocks are added to smoke them and crisp them up. Then they are mixed with pepita de calabaza and served in handmade tortillas.
    Edit: The burning hot rocks make a world of difference. If you are still around there, we can show you.

      @@justbeachy2031 You might struggle to find it online. It was some locals who told us it and even many people in Yucatan don't know about it. It uses a white rock which is high in calcium.

    This episode made me cry. I'm a first generation American, my parents are from Mexico & what Gonzalo said, about food being medicine & there not being a Healthcare system in Mexico just hit home... I am growing my own foods in my small balcony in my studio & for that I have to thank my parents & my grandma for always teaching me to grow food from seeds. Thank you Gaz, thank you so much for bringing light to my mother land!

    Bravo! By far the most epic content you’ve put out! The story, journey, creativity put into this series is seen, felt and needed! so refreshing and connecting. You leveled up from youtube, you need a Netflix series. Seriously blown away. If this was on Netflix, it would be saved to my list and I’d be anxiously waiting for each season to drop.     Your joy is palpable here, Gaz. This series gives me nostalgic vibes of globe trekker that I used to watch Sunday afternoon in the early 2000. Seeing the political signage hand painted on peeling walls also took me back to growing up in Brazil. Bravo, my friend.

      @@gazoakleychef I think RUclips would benefit from human curation and not just rely on the algorithm. I know it opens up a can of worms with favoritism, etc, but having only watch time, click through rate, and engagement as blind metrics disregards the human essence that is unquantifiable. The reason people still go out of their way to pay for other streaming services to access quality productions should inform RUclips about thinking deeper about this. I’m sure they have their reasons backed by data, etc…, but I just feel like sensationalism and senseless trends gain way more traction than they deserve. I thought about a reward system that would give everyone a few stars a day that they can use as a “super-like.” If they don’t give it out easily they get a reward, like no ads for a week, or a free movie, that way it “costs” people something to rate a RUclips channel they like and doesn’t fall into the like trap where everyone gets likes and it becomes meaningless. Anyways, I digress. My hope is that investing in quality, as you are, creates a more lasting impression in viewers, where they mentally “subscribe” to the channel.

I lived in Mexico over 18 years ago for a few years and felt the same way when I learned about their culture and experiencing their warm-heartedness.     This place reminds me and my wife of a garden up here in WA state, the "back to eden" garden, the guy has his own method he shares for free with everyone, giving tours like this guy is doing for Gaz. Its incredible, Gaz should totally check it out if the guy up here is still giving tours - he just uses woodchips, that's it. And his garden grows everything. The most incredible thing was seeing a Lavender plant (grows in dry soil) right next to a wasabi plant (grows in very wet soil). He barely has to water anything in his garden and he gives tours and lets you try all his stuff. Its amazing, like this garden here. Great stuff Gaz, looks delish

    This is your BEST work YET ! Literally this hits me at my core, every aspect of what makes a powerful food documentary … the very fibre of food and nature that binds the culture, people with renewed hopes and dreams. You’re the new “Anthony Bourdain” that humanity need right now (lot younger and not hard in the eyes lol, and wiser and healthier and so much happier” )
    FYI I’ve spent most of my life cooking and exploring farms to having my own farm to table establishments then finally to having my land to start my own farm and continuing to learn about permaculture. To see this eco farm doing “syntropic farming” and applying permaculture principles is very inspiring and energizing to my current work and passion.

    As a Mexican American I love this. I love the organic farm and the folks that run it. I wish more Mexicans had this mentality of preserving nature, whilst still being able to use it to their advantage. The Yucatan is absolutely precious and I hope more tourists can appreciate and respect its beauty. Too many crazy things are happening to Mexico's lands due to foreign investors and corrupt politicians, but my hope is that Mexico can overcome those extreme obstacles and thrive. Thanks for this video and the links! I definitely want to support the farm and ceramicists!

    I have a home in tulum but live in Canada. I share your exact same vision.     Found out about avantgardevegan about a week ago and I must say I’m completely obsessed with it hahah how have I not known about this hidden vegan RUclips gem!! This video is so wholesome and it truly brings joy to my heart seeing people like Gonzalez doing things that matter and investing in community culture like he does.     Wow! The variety of fruit and veg, the beautiful farm, the excitement about sharing food, the mayan cooking and farming methods, the use of the japanese method of producing compost! It's all so fantastic. Gaz you must have had such an awesome day with them!
    Food, travelling, sunshine and colours, different cultures and meeting new people, organic farming, and pottery! I'm a happy bunny watching this 😁

    I *could not wait* for the next part of your Mexican adventure and my gosh, this was even more interesting! I loved every single bit of it! So many amazing cultural insights, unique produce and dishes and spectacular landscapes. Plus, Gonzalo is literally my new hero from now on. He's such a wise and kind human being and the work he does is absolutely spectacular - for the people, local environment and the planet in general.     This brought tears to my eyes. Growing up on the border of Mexico these lovely people remind me so much of home. Making the giant batch of masa reminds me of watching my tias make tortillas when the whole family would get together. Thank you for creating this amazing series Gaz and Tom!
