Thanks for this, looks great. I can't recreate that taste at home no matter what I do. I did hear they have a secret special way of cooking the onions which gives them a vinegary tart taste you just cannot re-create at home. I also think the high heat burners are one of the keys.
It's the combination of pre-prepared ingredients that gives that certain taste when all combined into a curry. I run a takeaway from my house and I must say that the preparation alone is hard work and most people outside the industry may not want to spend 5-6 hours prepping. I'm just about that launch a new Indian restaurant cookery book that goes into detail about all this.

They say there authentic punjabi REAL punjabi wont eat this shit but then the gurras wont eat real punjabi food sarson ka saag maki ki roti try giving the fat gurras that 🤔

I have many many punjabi freinds and have been invited into their homes for over 40 years and not once and i mean not once have i ever ever seen BASE GRAVY THEY DONT EAT THAT KIND OF FOOD fed up of saying this now !!!
This is a restaurant, you CAN'T cook curries from.scratch without spending a lot of time. Homestyle food and restaurant food is totally different.
