I get that he became distrustful cause of people lied to him to steal his scabbard before, thus he thought the old man lied too even after he saw the letter fr his father. But after he was saved the 1st time, he was unconscious for days, yet the old man didn't touch his scabbard, plus the old man didn't even need to save him if he only wanted to steal scabbard, just steal it and kill him would be faster then trying so hard to save him and provide a place to live. After all, he was at that time weaker than even a child, but of course this A'phei didn't even consider that. Poor old man was trying to hard to save him, even wanted to create fake scabbards to help him not becoming a target by others. But was misunderstood and killed by the very paranoid selfish child he tried to save.

If you mean Old man Fish, he was not cured. There was a remnant medicine left over from the Big Medicine Santuary that can neutralize the poison with the help of a master's inner Qi. The condition is he have to spend the rest of this life in a humid surrounding. By the way it only works if the patient has only been poisoned recently.
