- A visit to Feva in Castelfranco (Veneto), Italy, to surprise Nicola the chef/owner and Nicola a hobby chef with a few ingredients to prepare pasta fast and from scratch as "staff food".
"Staff Food" rules:
The ingredients are a surprise to the chefs
It's casual and improvised cooking
The food is meant for the employees not for the customers
There is a time restriction - 15 minutes
Once the clock is ticking, the rules are ready to be bend
Ingredients used by Nicola (chef/owner):
Durum pasta (ancient grain, hence the dark color), sweet pepper, chili pepper, tomato, garlic, thyme, salt herb, olive oil, Parmigiano-Reggiano
Ingredients used by Nicola (hobby chef):
Durum Pasta, Tomatoes, Onion, Garlic, Chili Pepper, Olive Oil, Salt Herb, Butter, Parmigiano-Reggiano

It's a very cool concept for young chefs. They get to work fast and under pressure in order to practice their skills.

Id have chopped tomatoes finer to cook than the hobby chef would blend easier with hand blender. And more olive oil than water at the start for creating more flavour as he had limited ingredients. He also put too much pasta in so the sauce was too little for the pasta and after all that seiving of tomato sauce he then used the chunks of tomato he sieved. The tomato sauce should have coated the spaghetti 🍝
