Here's the recipe in UK measurements: 85 grams of butter 170 grams of sugar 2 eggs 112 grams of sour cream 3/4 tbsp vanilla 1/2 tbsp orange zest 2 tbsp of baking powder (i dont have self-raising flour) and 190 grams of flour
she says when she is making muffins she uses sour cream or butter milk so maybe butter milk she said that in the choco chip muffin video and they are the same

I just made these today and they came out really good. the only thing I am going to do next time, is not add the orange zest. it was too much for my taste and I didn't add as much as you did. Other then that they're great.

Swapped out the blueberry/orange flavour for raspberry. Also added full fat Greek yoghurt instead of the sour cream and they were phenomenal. Sweet, soft and tangy all at once. Thank you !

I tried this recipe today with Blackberries n it was awesome... I had less blackberries so i divided the plain batter n in half n added blackberries in 1 half n dates in other n it was awesomesttt... My family loved it... Thanks laura

I just made these. WOW AMAZING. So light and fluffy. I didn't have an orange so I substituted it with half a lemon zest and juice. It tastes divine. I also made lemon curd using your recipe. Can't wait to pair the two:)

so I made this today with some adjustments. I used your measurements for making self rising flour but instead used Gluten Free flour and swapped the blueberries for dried cranberries, dried banana and walnuts. I also added a little nutmeg and cinnamon and slightly more orange rind. :) SO GOOD Best breakfast muffins I have had in a long time!!! they cooked in prob 18 mins at 170-180 degrees celcius and I got 12 ;)

I made these with the following substitutions and it turned out gr8! So if u don't have any of the said stuff u can substitute them with the following(Same measurements as the original ingredients) Butter=Vegetable oil,Sour cream = Yogurt, Orange zest = lemon zest,cake flour = all purpose flour and salt and baking powder(she gives the amount of baking powder and salt in the video)
WOW! I must admit that this recipe is really mind-blowingly delicious! The only thing I did (wrong) is since one of my little sons is allergic to eggs, I replaced them by 3 TS of applesauce and the whole thing didn´t seem to rise very well and also was a tic too moist. u can make ur own buttermilk...we dont have it here too...i did this and i got the best/moist red velvet cupcakes (laura's recipe) ever! put 2tbspns vinegar into the 1cup measuring cup then fill it up with whole fresh milk, let rest for 5mins & u get homemade buttermilk. enjoy!
My class has made muffins too..... But it's like not with blueberries. The texture is like crispy on the outside yet soft and tender on the inside.... I bet that yours will be tasty too!

Hey Laura ! I actually made these muffins but I had a hard time. When I mixed the eggs with the butter I would get lots of lumps and I kept mixing and they wouldn’t go away! What am I doing wrong?? 😭😭😥
Yes, that is a good observation. Sometimes though, you can put frosting (or something similar) on muffins or stuff it on the inside. One of my personal favorites is stuffing a chocolate muffin with natural peanut butter. Crunchy or smooth? That's up to you!
