I made this tonight (minus the black truffle lol) and it was AMAZING! My husband said it was the best pie he has ever had. I added mushroom and thinly diced onion and parsley! Topped it with peppercorn gravy! Try it out yourself!
Its a mushroom, it has a very earthy flavor. Its super expensive though, I would just omit it in this recipe or use another mushroom like crimini or chanterelle
Just to add, a good alternative to buying whole truffles is to buy truffle oil which is just olive oil infused with truffles (use it sparingly it can be pretty strong) but you can get the flavor of a truffle for a lot cheaper then actually buying the actual mushroom.
Protip about the truffle: to get the same richness of flavor without emptying your savings, substitute a small amount of the oil or butter in the recipe for truffle-infused oil or butter. It's still a little pricey, but waaay cheaper (and with the added bonus of a long, long shelf life)!
Note #2 about truffle oil/butter: only use a VERY SMALL AMOUNT. The infusion in these substances is very strong and you don't want your pot pies to taste funky!
"I'm Wolfgang puck and I own a few restaurants n I'm gonna cook chicken pot pie" that statement is like a breath of fresh air. If you have the things he has and you own restaurants, it's way better to say "I own a few restaurants but it's whatever" than to brag and drone on about it.
"I own a few restaurants but it's whatever" sounds like you're lowkey bragging and fishing for compliments. I like Wolfgang's introduction -- at least he's straightforward about what he's proud of and it's easy to tell he's confident of himself. And also, that's wayyyy more humble if you consider how he oversimplified his career and reputation! He didn't even mention that he cooked for movie people and the Oscars for decades in *this* video. (he mentioned all that and dropped celebrity names in that compilation of him cooking 5 dishes though. Still, his bragging comes off as him being cheeky and blunt, and not someone who has a big head. For some reason, his bragging doesn't come off as annoyingly gloating.)
I know im late but u can do that with this recipe... But you might want to use regular flaky pie crust and maybe do a blind baking before adding the chicken and veggies!
dominicanbeauty34, Me 2! kind of a PET PEEVE when I don't have both. I c a lot of these fancy pants chefs using the 1 crusts n the recipes. Not hating...IJS
"Nice to meet you too, my name is Wolfgang" "Hey nice to meet you, so what do you do?" "Oh... I just own a few restaurants, what do you do?" "I... wait... a... few restaurants?" "Yeah but they're small, nothing big, tell me more about you" "No wait, wait... are you WOLFGANG PUCK?" "Oh you know me? Haha, but let's not get into small details"
I just made this and I'd like to add that the potatoes weren't fully cooked. I would recommend cooking them at least halfway before putting it into the mix prior to putting it into the oven. Also, I cooked the chicken with sauteed onions and garlic before I put it into the mix and it tasted great! Another tip would be to chop up some green chilis for some extra spice!
If you pay close attention to the potatoes he added, they are clearly cooked before adding to the gravy. So yeah, this isn't a recipe and if you are just cooking from the video you'll have to pay close attention and use your judgment as a chef. Your additions sound spot on, so other than putting in the potatoes raw, it sounds like your judgment as a chef is pretty good.
replace it with a more affordable aromatic mushroom if that is to your tastes. If you want you can add truffle oil which is more affordable. Do both if you want to go all out without dropping 1,000$.
You can go to Walmart and in the aisle where the oil is sold there is a small bottle I seen that says black truffle oil and I use it but very sparingly like you would use sesame seed oil. I find that truffle oil to be effective.
I made this for my mother's birthday and oh mamma it was soooooo good!! My dad who rarely make compliments actually said this dish is incredibly good and he is looking forward to the next one! And my mother loved it! Thank you Chef and buzzfeed!!
ferry octavian whats the point of diamond anyways? Its just a overprice shiny stone that has no resell value. Its just the marketing makes u believe in Diamond is the symbol of long lasting marriage
I used to work for the Evening Standard in Kensington High Street and there was a restaurant across the road called Benedicts where they served a delicious Chicken & Broccoli Pie very similar to this, with a separate baked potato. When I cook this one, I'll use chicken, broccoli, carrots, peas, closed cup and chanterelle mushrooms. No truffle.
This is so fucking wonderfully wholesome. The music, the ingredients, the relaxed cooking method is just wonderful. He's letting us in on a little bit of his soul. Dankeshan Herr Puck
Love the idea of using puff pastry for the crust for convenience especially but also because Pepperidge Farm's puff pastry is non-dairy, for those who avoid/can't eat dairy, which is also why I like that this recipe doesn't include (much) heavy cream. Blind baking the puff pastry to get a full crust will add a little hassle but not too much but give a much better result Love the simplicity of it, will give it a try tomorrow, thanks Wolfgang!
Bom Bom you have to know that the italian truffle he used is the most cheap you can get in Italy, an entire white truffle costs around 500000$ and i know this because i live near the place where they harvest those
Chicken pot pie was my fav back then 😩👌 specially during rainy season in Malaysia... always had this in my childhood days till now still one of my fav❤️ the flavors are just nostalgic and comforting for me
+Feyd01 so u starve urself for health reasons and still drink alcohol? Can you please tell me the name of ur dietician so that i never go to him by mistake?
I made a version of this today. I made the bechamel with a pinch of msg but i cooked it with chicken stock for about 8 minutes and made it dark blonde. Took 2 pieces of chicken breast and put them in the oven on 180 c for 20 minutes (convection). added frozen peas corn and bellpepper diced and shredded the chicken. parboiled diced carrots and added it. did the same with broccoli for 30 seconds and chilled in ice water to preserve color and crunch. sliced them up and added them. Salt and pepper. Man. I think I ate myself to death. :)
I wish this video is more about the puff pastry because it is the star of any chicken pot pie, and this one looks the best of recipes I've come across. Don't tell me that a grocery store version will do.

where I struggle with cooking is the sauces. I'd love to take some cooking classes. The only thing about these pot pies I'd like to change is to have the crust surround the entire thing instead of just the top. I like the pie better than the filling
Sauces aren't too hard if you take them low and slow. just make sure your pan is on medium-low when you're adding the milk and add it sloooooow. Whisk lots and be careful not to burn it! If lumps form, throw it in the blender lol. hope this helps :)
The part when I realized how rich he was was when he cut like two tiny-ass circles out in the middle of a giant sheet of black-truffle puff pastry, suggesting the rest was thrown away.
I do love how he talks about grandma cooking come out when chicken pot pie is a wholy anglo American thing. Although if there is someone who knows how to deal with pastry then it's Austrian chef
