If you pat the pancakes they will deflate and flatten. Also, if you use two pans you won't have to rush trough the cooking process and keep on adjusting the heat. Preheat you pans at just above low, I'll say between 10 to 15% heat and keep it there. Cooling down your pan with the wet towel will damage your pan in the long run. Hope this help :) thank you for the video
