I just ran across this video and decided I had to try this. I had never heard of Cafe Rio. Oh my gosh! This was fantastic! That dressing is to die for!
Katie in my last meal plan I made pizza dough, that is a great recipe to have. It is easy to make and very affordable. When the boys played football, I would buy 50 pounds of flower, bulk cheese and pepperoni and make endless pizza for the team. It was so cheap to do compared to ordering pizzas. The iron skillet crisps up the crust too. Learning to make things homemade is such a lovely gift for your family, and it enables your dollar to stretch and provide more for them. Well done!!!!!!
I have never eaten at Cafe Rio' but hear about it all the time here on the Tubes. That looks freakin' fantastic! I know my bunch would scarf that up in a second. Totally making this!

We could have Cafe Rio Sweet Pork several times without me having to cook a full meal each time we wanted it!! Cilantro lime rice is a big hit at my house so any meal that has that in it will go over very well!!
Definitely on my list of must try! If you keep feeding the workers so well, the night not ever finish your project! They won't want the great food to end.

I love this pork! Thank you for sharing how to do it at home. Can I ask why you discard the original marinade? I know some people just don't like using the marinade with the meat juices, but they could easily be cooked to kill any possible contaminants. I'm actually trying to skip a few steps lol, I like dump and go crock pot meals and I was just wondering if it would be possible to marinate overnight and dump in the morning. Thanks!

I haven't gotten there yet. It's so crowded right after the lighting now a days. You can barely drive the down street, the freeway off ramp is backed up, and the lighting ceremony itself is so crowded it's scray. I try to go see them closer to Christmas when the hoopla has died down a bit.

My kids have a very sophisticated palate but one thing they don't like...cilantro. Is that not crazy? They hate it. My son says it tastes like soap. I have to make plain rice as a result.
