I organized them by proteins, so all the ground beef recipes in a section. That way when I found ground beef on sale I could pull a few recipes using ground beef when meal planning. Same with chicken pork etc....SHelby

Enchiladas are a big favorite at our house but it's only hubby and I now so I don't make them as often as he would like (we would have leftovers for days)! I think I'm going to surprise him and make these in the next couple of days, he will be a very happy husband! :)
Did you put every one of those enchiladas in their own little bento box with the salads and beans for each person? I would have just thrown all the pans on a picnic table along with a big bowl of salad and a big bowl of beans and some plates and let them have at it! Wow! I'm impressed. I would feel special getting my own bento box!
I'm guessing it also helps with portion control? I've noticed you don't usually put a big "pot" of something anywhere. Even the potato soup was pre-portioned in your frig for quick takeaway. It's a great idea, that I may steal! Love your videos!
Shay I have found if I portion out leftovers in single serving containers, it makes it easy for our kids to take lunches etc. In the past I would put food in a big container in the fridge, sometimes it would get eaten, and sometimes not. Since I switched to putting in single serving containers, we have virtually no wasted food. Shelby

So glad you posted this video i have never had these before i just bought a can of the sauce atour local Mennonite store for .99 i thought since you said you have the Amish the here you need to ask them if they have a grocery store or if there is a Mennonit store near by. They shop at our store parking their buggys in the back you could save lots going to one of their store buying in bulk where they rebag it at lesser prices. I am sure they have lots of stores out there they sell all kinds of stuff here. Ask them. You made them a killer lunch. oh if Ken gets in the dog house he sure will have a roomy place to stay and then some thatbis a big shedor barn as we call them. Looks good.

Hi Shelby. Those enchiladas look fantastic!!!! I see a lot of folks use flour tortillas for their enchiladas. Here in Cali, we use corn tortillas for tacos and enchiladas. I have made these according to the recipe on the can. It tells you to coat the tortillas in sauce before you roll them up. It is sooo messy, I hate that part. I can see from the way you do it, it's not necessary; so I'm not doing it anymore! Lol Yours looked great!

We have several family members here helping with her care, so our household is currently ten. Our boys are all college age. Shelby

Tressa yes, i lightly fry the corn tortillas a few seconds on each side so they don't get soggy when I use the corn ones. I have never seen young men work as hard as these boys have. I watch from the deck, go inside for awhile and when I come back out the roof was on. Crazy. Shelby
