Never had banana bread or muffins with pecans, always walnuts. Will have to try these.
Pecans are sweeter. Walnuts taste slightly bitter to me.

I made these today and they turned out great-light and fluffy, not heavy and oily like American muffins can often be.

I've done much the same thing with Granny Smith apples, but I cut them in little pieces. I cook them first in butter, brown sugar and cinnamon. I'm not sure I need to do that, but I do.

These are absolutely delicious! My four year old daughter and I had a lovely time making these for breakfast. She has never been partial to muffins but she ate this one up! Made a batch this morning. Some mighty tasty muffins, sir! I'm "learning" a new oven so the first six were a tiny bit dry (NO FAULT of yours!); the next six, I knocked the heat back just a little (maybe 5 degrees?) and pulled them from the oven at around the 14-minute mark. Well I have never made muffins before so will have to try this one thank you, just a thought we don't chop with a knife we have this whizz machine with a pully and it cut the nuts so finely its amazing. you put the nuts in a small container and put lid on and and pull the knob like a draw thing we got it from Tupperware. it is a hand held draw cutter, hope you know what I mean....

Hi John- I usually have overripe bananas frozen. When defrosted there is quite a bit of liquid. My question is - should I drain the liquid off or add it to the mixture?
Don't know if he or anyone else will answer you. I also freeze bananas and make banana cake, never have strained them, cake/loaf turns out just fine.

Phwoar , ran out to buy Peacan nuts , had everything else in , Bonus ! , . Made my first batch this afternoon , and they are delicious , never made muffins before , what an aroma , I used the half tsps of nutmeg and half tap of cinnamon , the kitchen smelt like Christmas . Thanks for another brill recipe John. I used this recipe yesterday evening without the cinnamon and nuts and put it in a loaf tin instead. As a diabetic I used granulated sucralose sweetener instead of the 80g sugar (10g of sweetener), 160c Fan for 45 mins and it came out as a deliciously perfect moist, soft and light Banana Loaf. Absolutely georgous.
Just thought I'd post this for any diabetics who might want to try it without the sugar.

Wow!! Finally, a muffin recipe without oil!! MOTH (Man of the House) & I avoid muffins because every one we've tried tastes oily & leaves a nasty aftertaste. Banana Cake is a very popular thing here in NZ & most of us have a family recipe for them. This looks a brilliant alternative for using up over ripe bananas. One tip you might find interesting, chopping Nuts or Crumbling plain biscuits for cheesecake bases. I have a weak hand & I find it difficult to chop nuts, so I put them either in a plastic bag or between 2 pieces of Grease proof paper & use my rolling pin, just rolling it back & forwards. If I want to get the nuts quite fine, I put the bag between 2 tea towels or 1 folded over & use either a meat tenderiser or the rolling pin & whack the nuts, then roll them. Just check the size of the pieces using your Mark one trusty eyeball.
I wonder how these would freeze John? I know its a quick, easy recipe but I need at least 4 batches for our lot for Picnics. I'm thinking about getting a head start on these, as I need to make Mini Pork Pies, other pies, Corner buns (Brilliant & a firm favourite) etc. Making individual things is far easier than things that need cutting. I'm sure these will go on the list of must haves for Picnics.

My daughter and I watch from the US and we love your content! Do you have a nice fresh peach or cherry based recipe for any dessert? We’d love to hear it.
I'm from the UK, in my experience, we don't get enough sun light to ripen peaches, they go from unripe to overripened quickly, generally for peach recipes we use tinned peaches, much the same for cherries.

I had a couple of very ripe bananas and a bag of local Durham pecans (We are in North Carolina, US), and I knew it was time to try your recipe. Oh, they are just superb! Love your recipes but can you answer a question I have had for a very long time, Why do almost all recipes ask for unsalted butter but always require salt to be included.
So you can control the amount added as some butters have more than others.
Another fantastic recipe. A question; I have a friend who cannot tolerate vanilla. Would leaving that out impact the flavour of the muffins? Would you substitute anything in its place (more for the moisture ratio than the taste, I guess)?

Try this banana bread.
3-4 ripe bananas mashed
1/3 cup melted butter
Mix together and add
1 cup sugar (can reduce to 3/4 cup)
I beaten egg
1tsp vanilla essence
Then gradually add mixing in
1 1/2 cups flour
1tsp baking powder
Pinch salt
Large loaf tin @ 170 1 hour
You can bake this recipe in a loaf tin. It takes a little longer in the oven, but that's the only difference. Butter and flour the inside of the tin to make sure it releases easily once baked.

You could substitute the nuts for macadamia or chocolate chips, or sultanas
