Smoked chicken Thighs, Stuffed with Cheese and Jalapenos And Wrapped in Bacon!!!

  • Today’s video will be packed full of flavor! We’re firing up the Traeger, stuffing some chicken thighs and wrapping them in bacon. This is definitely something you guys are going to want to try at home!
    Step 1. Building: Today we’re using boneless skinless chicken thighs, you can buy bone-in and skin-on but you’ll have to remove it, and that part sucks. Once you have the thighs laid out you’ll want to season them, I’m going with Kosmo Q’s Dirty Bird for the chicken. You can use whatever chicken seasoning you’d like. Open the thigh up, now add a half of a jalapeno and a rectangle of cream cheese in the center. Roll it. From here you’re going to grab a slice of bacon and wrap it as tightly as possible around the outside of the chicken. Now, they are ready for the pit, you can go as is, add a toothpick to hold or use the Wilton Mini Loaf pan that i’m using.
    Step 2. The Pit: This cook can be done on just about anything, you just want to hold temps at 300. I’m using the Traeger 780 Pro today with some competition blend pellets.
    Step 3. The Cook: I’m laying out a timetable of the cook below. The times may vary on your cook but this is a rough estimate. During the first thirty minutes I like to mix up a sauce. Today I’m using the Blues Hog sauces. If you haven’t had them, give em a try, they're great on everything. For this cook I pull the chicken off the pit when the internal temp is above 165
    30 Minutes - Add Slice of Butter
    50 Minutes - Remove Chicken From Pan, Add Sauce
    70 Minutes - Check Temps / Pull at Desired Temp
    Step 4. Eat: Yep, that’s right, just about an hour and you’re ready to eat! It’s a very short, very rewarding cook.

    Shane great job these look amazing! I noticed you mixing the Blues Hog BBQ sauces. They sell this already blended called Blues Hog Champions Blend. And they sell it by the gallon! We buy the Champions blend on a regular basis from Ace True Value. It's our family favorite. Keep smokin man.

    Hi Shane, I enjoyed watching your smoked stuffed chicken thigh video. You made it look uncomplicated. I tried it with my Traeger (Costco, Silverton 620) and they turned out great! I didn't have the baking pan so I used toothpicks w/ two slices of bacon and everything stayed in place. I plan on experimenting with different rubs and stuffing contents. On these, I gutted the peppers which took nearly all the heat out. Thinking about the 321 baby back rib recipe next. I have made this previously on my Traeger Elite 20 and had a few failures as the fire went out during smoke setting while it was cold and windy. Hoping the new one from Costco doesn't give me any trouble. Keep up the good work Bother! Matt

      Great to hear that it worked out for you! I did the same with my peppers, haha. How did the toothpicks hold up? 321 Babybacks are a fun cook, I normally only do an hour wrapped tho, prefer mine to have a little tug. Hope your next cook goes smoothly, thanks for watching!!

      No problems with the toothpicks. Thought it was cool how after they were removed, the thigh held its shape, and bacon stayed in place. Looking forward to your next cook Brother!

      Morning, made the 321ribs which turned out great. I Love the new Traeger and wireless feature. Used the Voodo rub only and when time to wrap, spritzed heavily with apple cider vinegar only. I purposely held off putting BBQ sauce on so I could see what it tasted like, it was hit of the show!

    I’ve been making these for years! The family loves them. I suggest mixing some shredded sharp cheddar cheese to the cream cheese, then sprinkle some of that rub on there. Gives it a little more pop!

      I got this at a local shop called Whiskey Bent, I've seen them in Ace Hardware though too. Outside of that you can find it all over online.
