Oklahoma Joe's Bronco vs. The Air Fryer | Cooking a whole chicken | Hanging a Chicken on The Bronco
Well folks, I dropped the ball on this cook. I went in thinking I could take the win pretty easily and boy did I underestimate Kayla and her Air Fryer.
I'm pretty sure my probes were off, the skin on my chicken was a bit rubbery and breasts were dry. I'm thinkin the probes read a little off, lower pit temp and lower breast temp. User error :( and time to recalibrate.

      The black spots? That is the blood cooking out. You can see them start to form when I let the ribs sweat after applying the rub.

    We do something similar in SC, but we use Old Bay with corn and blue crab instead of beans and snowcrab; we've got tons of both. Plus some Better than Bullion lobster base.👍

      We have pre-cooked unsliced readily available year round. The spiral sliced comes out around Thanksgiving.

    A couple of ideas here I'll add to what i do, and a couple more i definitely won't. Probably everyone feels the same way, chili is personal. But whichever way you do, it makes better sense to salt to taste, not just "salt in".

    About how long for it to get up to 225-250? I am a novice when it comes to smoking or grilling anything but received the bronco as a wedding gift! Really want to learn how to use it and enjoy it. Currently following this video and it is by far the most helpful one I have seen on the platform.

    I'll let you go on the frozen crab, but, if you live in the south frozen shrimp is unacceptable! Here in Georgetown SC it's fresh brown or pink, or no boil! Blue crab and crawfish also!

    My wife would kill me if I had to wash my grill gloves after every cook. For handling hot I just put on disposable nitrile gloves over a pair of knit ones.

    It would be very helpful if you included the weight of the meats in your description. Also, your chili powder recipe showed 2 tablespoons of red pepper flake, which obviously would be an insane amount of heat. I think you meant 2 teaspoons.

      After trying about 40 different brands/flavors I've realized it really doesn't make a difference. I use the comp blend from Sam's now due to the low amount of dust.

      We feel like the KH is more for color than flavor. It's a great rub but benefits from being combined with other rubs.

    Did you say 9 hours? I do three pound chucks all the time. 4.5 to 5 hours max. Get yourself a charcoal or wood pit.

      I have both wood and charcoal pits. The Traeger is when I'm feeling lazy. The pit doesn't matter though, the temps and fat content are what really determine cook time.

    5 hours seems way to long to get to 161 IT for a chicken.Are you sure your smooker was running at the desired temps?

      I definitely agree. I was as sure as I could be. The Temp gauge read it and so did my probe. Very strange.

    Love the way you cook your meat and smoke the veggies and base. Way too heavy on the spices and salt in my opinion. But definitely worth a shot just a bit lighter on the chili powder, ancho, chipotle, cumin and salt.
