Prime Rib Roast on the Oklahoma Joe's Bronco | Herb Crusted | Homemade Horseradish Sauce | Lump Coal

    Early post this week, wanted to give you guys some time to plan for the holidays.
    For todays cook we're throwing down on the Bronco with a beautiful Prime Rib Roast.
    The Rub:
    Coarse Salt 1/4 Cup
    Cracked Black Pepper 1/4 Cup
    Minced Onion 1 TSP
    Chopped Rosemary 1 TSP
    Minced Garlic 1 TSP
    Horseradish Sauce:
    Prepared Horseradish 3 Tbsp
    Sour Cream 1/4 Cup
    Dijon Mustard 1 TBSP
    Mayo 1 TBSP
    Chives 1 TBSP
    Instructions:
    Pre-heat the pit to around 225. Once it's at temp you can get the roast on, add a probe and let the roast go until about 80 degrees internal, now increase the pit to about 300. When the roast is 120 internal you can crank the pit up as high as it can go, this will help crisp up the outside and provide a nice bark. Once the internal meat temp is at 125 you can pull it off and get it inside for a 45-60 minute rest. After the rest you're ready to slice it up, remember to cut against the grain.
