- Adobong Atay ng Manok with Perfectly Boiled Eggs is a chicken liver dish wherein the liver is marinated in soy, vinegar, and crushed peppercorn before being pan-fried and cooked inadobo style. Boiled eggs are added towards the end to balance the flavor.
Here are the ingredients for this recipe:
1 lb. chicken liver
4 eggs
5 tablespoons soy sauce
4 tablespoons vinegar
5 to 8 cloves garlic, crushed
4 pieces dried bay leaves
11/2 teaspoons crushed peppercorn
1 teaspoon granulated white sugar
1 cup water
3 to 5 tablespoons cooking oil

I do mine differently. I marinate the chicken liver overnight with garlic, bay leaf and pepper corn, soy and vinegar. Then stir fry the drained chicken with the marinated garlic and with onions. Once browned I put oyster sauce to cover the liver with flavor. Then put thr marinade sauce. Put addtl water then cooked until sauce thickens. I also put boiled quail eggs when the sauce is still not thickened. It adds the flavor on the egg. Btw, i don’t put sugar. Sugar makes the liver taste gamey or malansa.

I even learn from it, and I bet the oyster sauce would really add a flavor to the dish, and might be a good alternative for the sugar.

sa iyo sir 10 minutes ang egg? ako hindi mga 8 lang.. pag kumulo count ng 4 minutes tapos alisin ns sa fire at pabayaan sa kumulong tubig ng 4 more minutes tapos quickly banlian ng tap water mga 2-3x tapos set aside. ikaw may suka pa at yelo ako tap water lang sir :)

I'd also suggest adding diced ginger to lessen the smell and a bit of sugar, sa mga tulad kong hirap makahanap ng toyo o suka try red wine or white wine as an alternative it works perfectly. I'm a fan Banjo. Love all your recipes! Greetings from Austria.

Thanks for this. I cooked this but with some leftover chicken parts (from spatchcock). Well, wife and kids still don’t like liver but I did enjoy it. I tried as much as I can to remove all bitter flavors of kidney, even fried it on a separate pan. Thanks again for this. Very helpful.
