I have never made homemade yeast rolls and want to now that I'm looking at a less hectic schedule with retirement. Before I watched Phyllis Stokes' recipe, I've watched 4 or 5 others make yeast rolls. All recipes are similar yet different and with a very similar outcome. HOWEVER, I shall choose Phyllis' recipe because I adore her soft instructional voice ... and just her sweet, mild-mannered ways. I know that she is probably still teaching folks to cook good food .... but it's the Saints and Angels! Hello to her son! How lucky you are to have had a mom like Phyllis.

My 12 yo grandson helped make these rolls, from the mixing using his hands to the kneading to the forming and of course he was an expert taste tester. We made these for Thanksgiving dinner tomorrow. He said these rolls were “extremely delicious”. Thanks for sharing your recipe. ❤️

I made these for Christmas dinner. Let me tell you, these are the best, biggest,soft, moist dinner rolls I have ever made and oh my, sooo easy! I don't have alot of experience making rolls and was kind of nervous, but with your video showing me step by step it was a delight making them. I did do a shortcut by using the mixer with the dough hook to kneed. I'm making these again for New Years! Thank you soo much!

This is first time making these rolls but I did make those angel biscuits and everyone want me to make them again thank you for the way you make it seems so easy. Dear Miss Phyllis, I also have a yeast dinner roll recipe that I made over the years for holidays, as the boys were growing up. And when they would come for a visit they would always ask for them and some of their other holiday favorite dishes. Mine took 2 hours for the dough to rise then 2 more hours after they were formed into rolls. I never ever thought of using a heating pad. How brilliant! That would cut my rising time significantly. Hi Phyliss -- Oh my these were the "best" rolls that I have attempted to make for thanksgiving, ( lasted one hour from oven to dinner table ), a repeat once again, for Christmas ( no left overs, not even a crum ) to celebrate the NEW YEAR 2014, dinner rolls was requested ... easy easy easy .. ** followed the HOT WATER to oven for the rise prior to baking** came out super moist. Hey Phyllis, sample this... 1/2 C Sugar 1/2 C Shortening 1 Cup Whole Milk 2 Eggs & 2 Egg Yolks 2 Tsp Salt Bread Flour (650-670 Grams Roughly) 1 Full Portion/Packet of Yeast You have an excellent preparation method. Here's how I do it... I usually microwave the (milk - shortening - sugar - salt) until the shortening melts and then I stir in a Cup or so of flour until it's like crepe batter, by then the temperature of the mixture is just about right. Next the eggs & yolks get mixed in thoroughly and finally the activated yeast (I use WAY less water, as little as possible in fact and a little sugar) and keep going with the flour about 1 cup at a time as per any bread kneading process until the dough is perfect. Proof, as a cohesive whole, for 2-4 hours and again in whatever form you prefer, my grandmother always chose croissant roll outs, for about 45-90 minutes and bake for roughly 11-13 minutes at 350 for a batch size of 11-13 (longer obviously for larger batch sizes, you know how they're supposed to look). The recipe is in my cookbook on Kindle "Room Service at the Motel 9" :)...o I am at least the 4th generation in my family to have perfected this bread. It's funny to watch young men devour these around the holidays, WARNING, they're like piranha on these. You'll likely have to make 2 batches if you want any with dinner. I bet it's the sugar, it turns them into crackheads: like at the motel.

I wanted to mention if you have a Army-Navy store you can get one of their wool blankets. wash till soft. Light colored one. Your rolls, breads will not stick & there won't be a draft.
that heating pad is great! I have been using my waterbed to rise my dough. I place the bowl right in the middle with a tea towel on top, and then pull one duvet on top! It is the warmest place in da house!

Phyllis, you said if the dough leaves a hole when you indent it with your finger it is ready...So many others I have seen says when you indent the dough with your finger and the hole fills right back full then the dough is ready...Which is the right way...Hope this makes sense to you if you see this...Just love watching your videos...So easy to listen to...Thank you for sharing so much of this lovely talent you have...
If the indention comes back out it means the dough still has some rise in it. If the little indention stays in it means the dough does not have any more rise left so it's time to bake. All you have to do is just think about this for a minute and it will make sense which is the right way to tell when the dough is ready for baking. You want the dough to rise as much as it can before baking.

Your oven is dirty? Looks sparkling clean to me! I've already bought dry yeast and bread flour and am going to try your recipe! Made the dinner rolls and they are edible! The bottle of yeast I bought was fast acting. I think I need to compensate by putting rolls in hot oven next time. It was fun!

OMG! I have tried several recipes, all came out terrible, I made these the other night, for the first time ever, dough, everything came out right, so happy, but one question please, could I use a little more sugar in my dry mixture, for some reason there was not a lot of taste, I put butter on them but still not a lot of taste, I don't know what I might have missed, please help, If I could use a little more sugar, I wanted to make sure I could and about how much, I didn't want to overdue it, Thank You So Much for the help and your videos.
You could use more sugar but I would suggest you make sure your flour is fresh. It sounds like you might have forgotten to add the salt. I made some French bread one time and forgot to add the salt. and it was as bland as could be.

My Grandma always made rolls that way, keep the dough in a big bowl covered with greased saran wrap in the fridge overnight. Is that called slow rise? She had perfect results. I've made pizza dough the same way.🎉

Hi Mrs Phyllis, Ive been binge watching many of your videos and im excited to try some of your techniques and recipes! This video brought back a lot of memories I had of making yeast rolls with my grandma when I was young. My family and I have been trying to recreate them with her recipe for some time and we haven't quite been able to do it but watching this vidoe its amazing some of the details I remember now that I didn't before. First I enjoy your soothing voice.It calms me as I bake.Secondly these roll are my weakness.Oh with my homemade applebutter or pineapple jam. But Ms. Phyllis I must say when they came out the over I was in shock these roll look like they were on steroids. So large or should I say JUMBO !!! I had to take pic to show my sister. Phyllis, you said if the dough leaves a hole when you indent it with your finger it is ready...So many others I have seen says when you indent the dough with your finger and the hole fills right back full then the dough is ready...Which is the right way...Hope this makes sense to you if you see this...Just love watching your videos...So easy to listen to...Thank you for sharing so much of this lovely talent you have...
If the indention comes back out it means the dough still has some rise in it. If the little indention stays in it means the dough does not have any more rise left so it's time to bake. All you have to do is just think about this for a minute and it will make sense which is the right way to tell when the dough is ready for baking. You want the dough to rise as much as it can before baking.

It's a basic roll recipe so when you want orange rolls or cinnamon rolls you just add the fillings.Hope this helps. Your oven is dirty? Looks sparkling clean to me! I've already bought dry yeast and bread flour and am going to try your recipe! Made the dinner rolls and they are edible! The bottle of yeast I bought was fast acting. I think I need to compensate by putting rolls in hot oven next time. It was fun!

OMG! I have tried several recipes, all came out terrible, I made these the other night, for the first time ever, dough, everything came out right, so happy, but one question please, could I use a little more sugar in my dry mixture, for some reason there was not a lot of taste, I put butter on them but still not a lot of taste, I don't know what I might have missed, please help, If I could use a little more sugar, I wanted to make sure I could and about how much, I didn't want to overdue it, Thank You So Much for the help and your videos.
You could use more sugar but I would suggest you make sure your flour is fresh. It sounds like you might have forgotten to add the salt. I made some French bread one time and forgot to add the salt. and it was as bland as could be.

My Grandma always made rolls that way, keep the dough in a big bowl covered with greased saran wrap in the fridge overnight. Is that called slow rise? She had perfect results. I've made pizza dough the same way.🎉
