24 Large Orange Rolls

  • Orange rolls for a crowd.
    Here's the recipe:
    1 cup scalded whole milk
    1/4 cup sugar
    1 teaspoon salt
    1/4 cup butter
    1/2 cup water (105-115 degrees)
    2 packages yeast or 2 heaping teaspoons
    2 eggs
    5 1/4 cups un-sifted bread flour
    Filling:
    2 tablespoons orange rind, grated
    1 cup sugar
    1/2 cup butter
    1/4 cup + 1 tablespoon bread flour
    crumb together
    Icing:
    2 cups confectionary sugar
    1/4 cup melted butter
    juice from one orange
    bake rolls from cold oven at 375 degrees for 30 minutes
    This makes a great treat for company during the Holidays

    Oooohhhhh Ms. Phyllis! I have to tell you that I made your orange rolls today and they are the most delicious rolls I have ever had! Putting on the glaze, when the rolls are warm, is a wonderful idea! So very yummy!!!! I will be making these over and over and over again! They would make a delicious gift also! Thank you so much for taking your precious time to teach those of us who need to be taught! You are a huge blessing!❤️

    You and I cook so much alike. I love your recipes and techniques. Sometimes you take my brain on side trips, and flights of fancy. What if I added this or that, to your recipe, or my recipe could be modified, by using this ingredient, or that technique. Sometimes my brain, spins off in a completely different direction, and comes up with a whole new recipe.
    While there are so many who benefit from watching your videos, there are many, many more, that could. So many of today's generation are fast food junkies, simply because they just don't know how, or where to start. My youngest granddaughter, watched, and helped me cook, as she was growing up. She's 25 now, lives alone, is self sufficient, and prides herself, on her ability to cook from scratch, like you do, grandma.

    Phyllis I have been watching you bake and cook and share your life and family for the last couple of mounths and really enjoy your talks. I am so sad when I heard of your health scare.     Your heating pad idea is brilliant. Will work especially well when baking in a cold winter kitchen. I will be making these soon. You should publish a cook book. Thanks for all your videos..

    Love your way of doing things, and your recipes from the 50's.! Cut a piece of rubber shelf liner to fit your cutting board. Place it under your board, and it won't slip. Blessings.

    I can't wait to make these! I've tried many recipes for orange rolls & the filling never seems to have enough orange flavor. Genius mixing cold shredded butter with the sugar so the orange zest gets distributed evenly & permeates the sugar! Love the idea of using the heating pad to proof the dough. Also using scissors to snip the rolls apart- they don't get squashed like they would if you used a knife (even a very sharp one). I'm so excited to try this recipe! So many great tips.

      Love the Anne George reference!!! I live in S California and absolutely drive my family crazy in our vacation to the south as I was on a relentless quest for Anne George food (boiled peanuts, Sister Schubert orange rolls, Milo ice tea etc).

    Older recipes said to scald milk to kill bacteria and an enzyme that prevented thickening in recipes. Today, most milk is pasteurized, so the bacteria and enzyme are already gone. Also, scalding milk raises the temperature, which helps dissolve yeast and melt butter when added to bread recipes.

    I made those orange rolls and they turned out really good. that me and my mom could not stop eating them . I took them to my sister work and her co workers ate the ones i brought to the hospital. thanks for for the yummy recipe i will be making these again.

    The explanations are so appreciated. It didn't occur to me that milk enzymes and chlorine in water kills the yeast.

    Ive never seen that brand of bread flour down here where I'm from (deep deep dwn here in the south) but maybe I've just overlooked or just haven't paid attention but either way those buns/rolls look delicious enought for me & they're are a good size. I'm gonna try making them, I've made a lot or sweet dinner rolls & cinnamon rolls but never tried making orange rolls, even sound delicious

    Since milk is pasteurized now, I don't think we need to worry it will kill the yeast. If it's too hot though, I think it can kill the yeast. Baking is a science. I think I need to go commit some science and bake something with yeast now. Those rolls sure do look good!

    27 is a strange number, but I guess you will divide the ball into 3 then divide each into 3 , then divide each of those into 3, LOL, then take a few aspirins lol.

    Hi Phyllis - I have a question about the stainless steel pans. Do they clean easily? I have non-stick frying pans, non-stick baking pans and they are never really non-stick too long before I have to grease them anyway. Do you have to scrub them or do they get clean in the dishwasher? Thanks!

      +DDiamondRRuby As you might guess stainless steel pans are very different than non-stick pans.The stainless steel must always be greased and food does sometimes stick to them even after greasing them. I don't put my pans in the dishwasher mainly because of their size, I just wash in the sink - it's pretty easy to get them clean.

      Thank you Phyllis. I was considering buying 1/2 size sheet pans, even if I had to use two for a recipe they would fit in the dishwasher. Not being lazy, I just got a dishwasher a couple years ago after about 25 years of doing dishes for my family. Don't really know why I waited so long! Keep on cooking Phyllis, love your videos :)

      I slightly separate the rolls and place them in one of those salad containers, I can usually get two
      layers in one of the short containers putting a piece of wax paper between the two layers. If you slightly separate them you can easily remove them one at a time for serving. They will defrost very fast in the microwave in just seconds or on defrost for a little longer, they come out like you just took them from the oven after baking and icing them.

      you said regular you know you are so clever to put the dough when rising on a hesting pad never would oof thuoght of that the kitchen at home was sooo cold in the winter had to makesstuff when it was hot warm weather missed out on making cinnamon rolls and a bigger counter

    Approximately how long do the, 24 large Orange rolls for a crowd, take from start to finish?

      Putting the recipe together and kneading would probably take 30 minutes, then an hour to double in bulk another 10-15 minutes to form into rolls, let rise again 45 minutes and another thirty minutes to cook starting with a cold oven. I'll let you add how much time this will take but do remember while the rolls are rising you can be doing something else and also while they are baking. You can also mix the bread and knead it the night before then put the dough bowl in the refrigerator until the next morning
      then form the rolls, allow to rise and then bake.

    Well Mrs Phyllis, I made um I sure Did! WOWOOWEEE They came out Great!! I ate one and David ate one so we are keeping one each for Lunch Today and the other 20 are going to my Sister's House. Oh Thank You for sharing all that You know Mrs Phyllis. You really taught me how to use yeast in the jar. But I have a Great Starter if you would like some Ma'am it'd be my privilege to send you some in a sealed Jar over Night. Its really good and I made it with Potato water after I boiled my taters for potato salad. I put just a bit of Wild honey in it and no salt. Filtered water when I feed it. If You and Mr Bucky like wild yeast bread and it saves on buying yeast :) My Starter is named Christopher after my Son that's with Jesus. I'd be very happy to send some Mrs Phyllis :) It makes my Bread Flour Rise very well actually better than the package stuff. Pls let me know and I'll get you some out this week :) Glenda

      Thank you for thinking of us, here's my suggestion - give the starter to someone you know who has never made yeast bread or rolls before and would like to learn, pay it forward. Take with you bread flour and the starter and show them how. This way the person you teach could teach someone else once they've learned and then on it would go. Yeast love the potato water.

      Mrs Phyllis, we must be family, I have given 3 pint mason jars half full to 3 ladies older than me, they wanted to save on buying Yeast. And the ladies my age, well they aren't cooking women they order out or eat out all the time. I always send the children any of the sweets I make, and sometimes they will ask me to make a greek salad for their parties and what have you, they think I'm simple minded because I bake and cook a lot. I'm far from simple minded but folks that have too much money think its best not to fuss over things they can pay to get. I'm raised very strict and very greek strict my Father was in the Military 34 years so You know how strict that was. I enjoy cooking for all my family even when I'm in so much pain I still have to get up and cook. Most of my friends are much older that I feel like I belong there in that older group. I do give to the Salvation Army and the Soup Kitchen I give all my leftovers that aren't really leftovers I actually make 2 -3 times a lot more so I can take it the next morning to the soup kitchen, Folks bring stuff in for the Lunch and its like a Buffet style for people to get in line and have a nice big lunch. Most of the Pastor's in our Town go by there at least 3-4 times a week and spread the word of God and they have lunch with everyone. But Ma'am I sure would like you to have some, as much as you done for me I would feel a little better that I did something just for you, well I'll find something you'll like and I do wish you'd change your Mind, I have plenty and I try to do something Jesus would want me to do as much as I can. I was raised that way its in my Blood. Thank God! You are a very Good Woman and I know if not on this earth I know I'll see you on the next one :)

    Is this self rising flour?

      This is all-purpose flour. Yeast makes the rolls rise.

    are you holding the camera or bumping it? for some of us, the movements cause us to get nauseated. i cant watch movies where the screen jumps either. i havent seen any of your other videos do this. love the recipe though.

      I do sometimes bump the leg of the tripod and also when I'm holding the camera I might jiggle it a little bit. Sorry it made you nauseated. I do try very hard not to do this but sometimes it's unavoidable.
