    Famous Orange Rolls Recipe:
    -1 ½ pkg. yeast (1 ½ T.)
    -2 T. orange rind
    -1/3 cup warm water
    -¼ cup fresh squeezed orange juice
    -1 ½ cups milk, scalded
    -1 tsp. salt
    -½ cup vegetable oil
    -5 cups bread flour
    -1/3 cup sugar
    1 cube butter, melted
    -2 eggs, beaten
    While milk is scalding, dissolve yeast in warm water with 1 tsp. sugar, in small bowl. In a large
    mixing bowl, combine sugar, salt, cooking oil, orange rind, orange juice and scalded milk. Cool
    slightly. Add 2 cups of the flour and beat vigorously. Add yeast and eggs and beat again. Add
    remaining flour 1 cup at a time and mix after each addition. Turn out dough onto floured
    surface and knead for 3 minutes until dough is smooth but still very soft. Place dough back into
    large bowl that has cooking oil and turn to coat top of dough; let rise for 1 ½ hours. Punch
    down and divide dough in half. Roll out on floured cloth to ¼” thickness and cut with round
    biscuit cutter. Prepare large jelly roll pan with melted butter. Take each round cut roll and fold
    in half and pinch to seal. Dip each roll in melted butter and turn onto pan lining each of the
    rolls fairly close together, barely touching. You should have about 40 small rolls per pan. Cover
    rolls with cloth and allow to rise for about 45 minutes. Bake at 350 for 12-15 minutes. When
    baked, cool slightly before glazing with orange glaze and serve immediately. Best if served
    warm out of oven.
    Orange Glaze:
    2 cups powdered sugar
    2 T. fresh squeezed orange juice
    1 heaping T. zested orange rind
    Combine glaze ingredients and beat thoroughly.

    Easy explanation for the scalded milk…heating the milk breaks down proteins in the milk that can make the yeast rise slower.

    Can you use regular flour? Where can I order a cookbook?

      Yes. It will work fine. I used it for many years before I started using bread flour. This is a soft dough that doesn't need very much kneading. My digital cookbook is being run right now and I'll have it ready to go online by next week. I will contact you when it is ready. Ann

      @@everydaycookingwithann9502 it was actually fairly well shot for a first video, if you take out the shaking. I've seen videos from people who have been making videos for years that are shaky.

    Why not butter the bowl? My mom always buttered the bowl that any yeast dough would rest in.

      Probably because I dip the rolls in butter when I put them on the pan to rise. Just a little oil keeps the dough soft while rising

    You didn't say the amount of yeast or milk as you made these rolls. Lovely recipe but your ingredients and instructions are all over the place. Please list your instructions as they are needed and the amounts. Good recipe, though.

      Uhmm! Why didn’t I catch that!?? Recipe should be in the description below the video!
      1 1/2 T yeast in about 1/3 cup warm water with a teaspoon of sugar to activate it! 1 1/2 cups of milk scalded (just barely before boiling) This recipe is so forgiving. So add more OJ if you like or more zest. Always use fresh OJ.
