    Shrimps (Prawns) 200g
    Bamboo Shoots 40g
    Fat Pork 20g
    Starch 1tsp
    Pepper ½tsp
    Sugar 1tsp
    Chicken Bouillon (appropriate amount)
    Lard 1tbsp
    Sesame Oil 1 tsp
    Wheat Starch 90g
    Tapioca Flour 60g
    Boiling Water 170ml

    Peel the prawn shells and pick out the prawn intestines
    Rinse the prawns with water and a tablespoon of starch, pad dry them

    Dice the prawns, add half a teaspoon of salt, stir it until it becomes gummy
    Use 1 teaspoon starch, ½ teaspoon pepper, 1 teaspoon sugar and some chicken bouillon, mix well

    Dice the fatty pork
    Dice the bamboo shoots and boiled for a minute or two to remove the stench
    Mix the prawns, bamboo shoots and fatty pork, add a tablespoon of lard and a teaspoon of sesame oil

    Mix the wheat flour, tapioca flour and boiling water
    Set aside for ten minutes to cool, wait until it is not too hot and knead into a dough
    Cover it with a cloth and let it sit for ten minutes

    Press each piece into the dumpling skin

    竹筍 40 克
    肥豬肉 20 克
    生粉一茶匙
    胡椒粉半茶匙
    糖一茶匙
    雞粉(適量)
    豬油一湯匙
    蔴油一茶匙

    木薯粉 60 克
    開水 170 毫升
    [做法]
    處理蝦
    剝蝦殼,把蝦腸挑出
    用水和一湯匙生粉洗淨蝦肉,印乾
    處理蝦肉粒
    蝦肉切粒,下半茶匙鹽, 把它打到起膠
    用一茶匙生粉,半茶匙胡椒粉,一茶匙糖和適量的雞粉,撈勻調味
    處理肥豬肉和竹筍
    肥豬肉切粒,隨意剁一下
    竹筍切粒,灼水一兩分鐘把味辟走
    撈勻蝦,竹筍和肥豬肉,加一湯匙豬油和一茶匙蔴油
    如何製作蝦餃皮
    把澄粉,木薯粉和開水撈勻
    擱在一邊十分鐘晾涼,等到不太熱便搓成麵團
    用布把它蓋住讓它靜置十分鐘
    如何壓蝦餃皮
    把它切開,每塊大概 10 克
    把每塊壓成蝦餃皮
    如何包蝦餃
    包上蝦餃餡後用大火蒸四分鐘

    That was the best tutorial I've seen for Har Gow. It always looked difficult (still does) but at least now I got clear instructions!

    My dough crack and break easily, how to fix that?

      There are 2 places that you need to check, and fix:
      1. The hot water you add to the Wheat Flour must be boiling hot and the Wheat Flour should become translucent after adding hot water.
      2. The dough should be always covered to keep it moist and prevent it from drying.

      Wheat Starch is made from Wheat. Some people call it Wheat Flour.. It can be bought easily in supermarkets. You can search in the shelves carrying Flours.

    The filling was so unhealthy. Using animal fats. It's unnecessary to put in animal fat with the lean meat (shrimp). If oil is not optional, try to use healthy oil instead of animal fats. Otherwise, it's very nice.
