For qotw: Do rice cooker one-pot meals. Dump your rice, meat, some veg, eggs all inside the rice cooker, season with some oyster sauce and soy sauce and cook it all together in the rice cooker. Tastes great, healthy, less clean up too.

QOTW: Baked potatoes! You can easily cook them in the microwave for 15 mins by stabbing a few holes in them and putting them on a plastic bag. Baked potatoes are very versatile. You can dress them as simple or complex as you'd like: add some butter, maybe some canned chili. Or top them with a fried egg. Your options are limited only by your imagination.

QOTW: Frittatas are a lifesaver. You can use up a lot of leftover veggies, meats, and cheese scraps, and it reheats really nicely too. It does mean you need a cast iron skillet, but let's get real. If you don't have a cast iron, you aren't cooking right. Fix that. Anyways, they're so great because of how versatile they are. Turn the oven to 350 F, dice your add-ins, sauté your veggies and any meat until it's browned, beat together 6 eggs with a bit of milk (nonsweetened soy milk works great here if you're avoiding dairy) and some salt + pepper and pour the eggs over the contents of the pan. Add cheese if you'd like, and cook over medium-low until the edges set a bit. Then pop it into the preheated oven, I let it go for 10, and then check every 5 min until the center doesn't jiggle when you wiggle the pan. If you trust your oven, let it go for 15 and it should be ready. Still do the wiggle test though. Serve with buttered toast, and you just cleaned out the fridge, made a protein rich, healthy meal, and made leftovers for tomorrow. It's the perfect lazy dinner, and I made one last night with leftover ham, tomatoes that were about to spoil, the last of my shredded cheese, half an onion, and some garlic. It was delicious.

This time of year, squash is in season. Pick out a variety or two you haven't tried, cut in half, scoop seeds, brush with oil, and roast on a cookie sheet. Easy way. Once you know what flavours you're cooking with, then see about trying other flavours with it, different ways to cook, etc. Save the seeds, and guerilla plant them around the city parks and in the middle of roundabouts in the spring.

QOTW: One pan creamy pasta. Butter and chopped garlic in the pan, simmer on medium for 2 mins (stir occasionally till brown), add any kind of cream you want with 1/2 cup water, throw in pasta of choice, add salt and pepper, add mixed italian herbs, stir everything together, increase the heat and cover the pan. Gradually add more water if necessary (depending on how much sauce you want). Check every minute or so to make sure it doesn't burn. Add cheese of choice. Should be done in 15-20 mins max, and you only need to clean the pan + cutlery. If you want to add bacon: butter and bacon in pan at the beginning, remove bacon when done, then throw in garlic and follow the rest. Would also recommend having a salad before the pasta.
Nutrition wise: carbs, protein, fat, calcium, veggies which have fibre and micronutrients. Pretty healthy overall

Pasta salad is excellent and easy to make. Dice up fresh broccoli, quarter a container of cherry tomatoes, 2 cans of sliced black olives(drained) diced summer sausage (1/4 in pieces), cheddar cheese (1/4 in pieces), 1 package spiral pasta boiled to desired softness, cooled. Mix it all up with some bottled italian dressing (just enough to cover it all without puddling in the bowl). Leave in the fridge at least 1 hour. Even better the next day, and makes a ton!

QOTW: Okay, as a PhD student who teaches and directs, I have zero time to meal prep. What you want is protein, carbs, some healthy fats, and throw some vitamins in if you can. So my go to is this: Toast a whole wheat english muffin. In a bowl melt some butter and carmelized onion jam (tastes awesome). 30 sec, melted. Throw in an egg, salt, pepper. Whisk, back in the microwave, another 30 sec. Take it out, mash it up to make scrambled eggs, add in some goat cheese (hell ya healthy fats). By this time the english muffins are done. Slap you oniony, cheesy, scrambled eggs on that, making a muffin egg sandwich. Wrap in baking paper or tin foil. For bonus points, add an orange. They last for flipping ever, and oranges smell so good, uplifts the spirit. Throw it all in a lunch box, plus a bottle of water, run out the door. Takes like 3 min to complete, less if you say f*** it and don't clean up as you go. You can also prep it the night prior, you'll just have to re-toast your muffin the next day.
Hope you try it and like it!

    Campbell's creamy tomato sip'n'soup.
For a real meal with cooking, but minimal effort, it's called lemonade chicken: 6 chicken breasts in a 9×13 baking pan. In a bowl: half a 12oz can (6oz) of frozen lemonade from concentrate, 1/4 cup soy sauce, 1/8 teaspoon garlic powder. Stir the bowl contents. Pour half over your chicken in a baking pan. Oven it for 25ish minutes, covered with foil, at 425°F. Cover off, flip chicken, pour other half of bowl mixture over chicken. Leave uncovered, oven it for another 10-15 minutes (always check chicken temperature to be sure it's fully cooked. Cook times vary with thickness of meat.) while it's ovening, mix the other half of the lemonade concentrate to make lemonade.
Use leftovers for sandwiches. I've also made it with canned shredded chicken breast just kind of sauteed on the stove.

AOTW: A barbarian burger: A hamburger where the outside is singed but the rest of the burger is still raw, with ketchup on top. Another one which is super inexpensive and leaves only one dish to clean is a package of ramen noodles crushed up a bit with a little shredded cabbage and a little mirin plus a dash of rice vinegar. Alternatively, don't put in the cabbage and save some time. Works with either nappa cabbage or head cabbage. Really crunchy, really tasty, and doesn't cost much money. Is also quite filling. If I'm totally desperate and have literally zero time, I do have fish food around. Just toss some back and pretend you don't taste it. Fluval Bug Bites turtle pellets might be good to put in your pocket and eat eat on the go. It's expensive, but it will take care of your protein needs. Just make sure not to think too hard about the fact that it's made with soldier fly maggots. Count yourself lucky that you don't have to eat live squirming buts. That's what my mother would have said. Sometimes that seemed like good advice, sometimes not so much.

Meal idea for such times: I choose convenience meals where I can use the leftovers to make an omelette/scramble. Like I order a bowl from chipotle, and know I’m going to fill up on chips. Try and eat up most of the lettuce, and then the leftovers just heat up in a skillet and add a couple whisked eggs.

QOTW A very easy meal is a baked chicken in the crock pot. Wash whole bird and add half onion to the cavity with a little butter. Sprinkle salt, pepper and a little sage (to taste) and put on high. At dinner time you will have the most tender, juicy bird you ever tasted. Warm up some veggies and you are good to go.

as someone who works with fish vendors who reuse boxes it’s super common to see labels like that on the outside of a box with a totally different order in them. i have had saltwater fish boxes come in saying there’s 50 wrasses with an Indonesian shipping label.

THIS WEEK'S QOTW WAS MADE FOR ME 😤 DISABLED POWERS! ACTIVATE!
Okay so I'm actually always tired and deal with chronic pain so I have a few recommendations that I use regularly. They shouldn't take you too long to make but I don't have a ballpark since I cook in little stages with rest on between so I don't give up and decide not to eat lmao
    Meal 1:
Spring rolls. I will put literally anything I have on hand in them. It helps me keep up my nutrition and not cave to getting delivery. I tend to have a lot of veggies and chicken or fish and I make sure to have some rice noodles in case I overestimate my energy for the day.
Meal 2: Rice and pickled veggies. I like to pickle my own veggies but stuff from the grocery store is pretty good too! I think adding an egg and pork floss is really nice.
Meal 3: Beans and rice. Okay so I clearly choose rice as my carb pretty often. I like to use pinto beans and Cajun seasoning with some salt pork into the slow cooker. Rice in the rice cooker. Boom. It's not exactly exciting but it's the least effort while still giving you enough energy to get through the day. It's probably a good idea to have a salad with it because it's kind of a heavy meal all things considered.
Meal 4: Everything Soup. This is a roux based soup that is basically just like... leftovers from food prep where I only used half a portion or something. It's like a seasonal stew situation that you can base the seasoning around what you have. I like to put potatoes and onions in it and it can also be cooked in the crock pot.
Meal 5: Chicken and rice soup. This one is super easy because I just get a rotisserie chicken from the grocery store and break it down. Then soft sauteed onions, garlic, carrots and celery with salt and pepper to taste. (I might add collards, mustards or kale if I'm feeling extra healthy.) I usually have my own chicken stock that I add with the chicken and veggies as well as a cup of rice and a bit of cream - if you like a creamy soup. This is probably my favorite go to because it means I only have to cook once that week.
I hope at least one of these sounds yummy!

I am also disabled and end up getting fatigued quite easily. Multiple sclerosis paired with stage 5 renal failure and a spinal cord injury simply do that. I think I will try some of your recipes so that I can add a little variety to my own. Pintos are awesome. I usually toss a ham hoc into mine. I also add a bit too much water to the soaked beans, then when they're done, I save the water (either freeze it or use it right away) as the base for an easy stew. There are so many ways to be creative and turn that little extra into something special without breaking the bank, or wearing yourself completely ragged. That way you can wear yourself completely ragged on something else! Probably on something you'd rather not do. Of course there's always procrastination for situations like that. I procrastinate way too much.

@@Chompchompyerded For me I'm still trying to chase down what genetic condition I have. So far all I've gotten is that it's likely a connective tissue disorder and there are apparently a ton of things that could be and literally no one is invested in figuring it out 😃 So I just get by with my wobbly joints and try to figure out how my body works all over again.
I'm definitely borrowing your bean water idea because I have never thought about that but it would totally make a good savory base. I can't stand for very long without pain or getting dizzy so I tend to try to sit while I chop veggies and stuff but any tips to help with the day to day are so welcome. I've been figuring things out all on my lonesome and just skipping meals altogether when I don't have the energy. The lowered mobility and energy is pretty new for me and I am struggling to say the least. 😭 This is basically what I eat when I don't just blow my grocery money on delivery to have a good meal and that's always a bad idea.

QOTW- my two favorite simple comfort foods:
-grilled cheese sandwich- (sourdoughbread, American cheese, a dab of Grey Poupon)
-blanch rapini and sauté in olive oil, add to pasta cooked “al dente” and top with grated Parmesan- joy! ( I blanch it in the water I’m using for the pasta)
One more recipe- have you tried making instant mac & cheese, except (after cooking the noodles) add Greek yogurt instead of water? The difference is extraordinary!

I haven't seen my corys actually eat snails, but corys have a sand-sifting behavior where they'll suck up the sand for whatever food is in it and spit it out through their gills. One time I saw one of mine suck up a very small Malaysian trumpet snail and eject it through its gill!

    Honey glazed pork
A warm, sweet & savory dish with comfort food vibes
    - cube pork in bite-sized pieces
    - 50/50 honey + soy sauce. You need less of this than you think, it's pretty potent. Add spices and dilute with water to taste. Ginger, all spice, and smoked paprika are tasty choices
    - any random veggies you feel like adding
First you pan fry the pork and veggies until the pork is almost done cooking. Make sure you have rice cooking on the side as you do this. Add your honey/soy sauce slurry. Cook until pork is done and sauce is a preferable texture. Serve over rice
You can also make a slurry with about a table spoon of corn starch or other thickening agent and a little bit of room temp water if the sauce needs to be thickened. Make sure this gets cooked into the dish before serving
    Final step, we ballin B)
Found this to be a good emergency meal because it cooks quickly, requires minimal prep (even easier if you cube pork before hand and keep it in the freezer), uses one pan, and is filling

Preferred meal for quick, somewhat healthy: eggroll in a bowl. onion, garlic, green onion. separate green onion white and green. Toss the onion, white part of the green onion, and garlic together, and get a medium chop.(I toss into a hand crank food processor...) fry it in toasted sesame seed oil until soft and add in 1 lbs. ground pork, with 1 teaspoon each of salt, powdered ginger, and pepper, along with a 1 teaspoon of minced ginger, and a good helping of a sriracha of choice. Cook meat until browned and well broken up. Add in 1 bag of coleslaw mix, 1 tablespoon of rice vinegar, 3 tablespoons of soy sauce, and just cook it until the coleslaw mix wilts. When serving top with finely sliced green bits of green onion, a spicy mayo, or sriracha. It still feels like you've made something from scratch, takes less than 45 minutes, full of flavor, not horrible for you, and it's all made in one large pan, so minimal dishes.

califlower spagetti!! soo easy and you'd never know it wasn't meat. saute some diced garlic and onions, throw some cut up (finely) cali in there, fry for a bit, add some beef/veg stock to make sure the cali is soft, add in tomato basil sauce (I like raos) and tomato paste (to thicken) and then boil out some of the water to thicken. Ofc boil noodles and you are done B)

    1) Chop and drop all your veggies and meat in a wok & stir fry.
    2) Chop and drop everything in your rice cooker - one pot meal.
    3) Use a microwave to steam some fish fillet & vegetables.
    4) If all heat sources fail, then toss a quick salad with cheese & nuts.
