Ponmudi, Kerala, India - Early one morning we drove into the mountains of Ponmudi, into the lush jungle, home to one of the incredible indigenous tribes of India. It was an amazing experience to learn about their culture, and especially to watch them prepare a number of truly incredible cooking techniques - unlike anything else I’d ever seen in the world. #India #Kerala
I had no idea what or how they were going to prepare a leaf basket steamer, and I didn’t even know that’s what they were going to prepare from the beginning. So it was even more fascinating for me to watch them prepare this ancient, and rarely ever seen anymore Indian cooking technique. They first heated rocks in a hot fire. Then the next step is they fastened a leaf basket from a specific type of green leaf. When the rocks had heated for a few hours and were white hot, they dropped the leaves into the bottom of the leaf steamer, added in the cassava, wrapped it all in leaves, then added bamboo poles on the inside to feed in water in order to make then entire packet steam and smoke, and cook, all at the same time. The result was a flavor of cassava unlike anything else I’ve had. It was steamed, but had this incredible smokiness to it.
The fish was cooked differently, seasoned with chilies, and then wrapped into a banana leaf packet and tossed directly into the fire. That was cool too, and also delicious. But the highlight was the amazingly unique leaf basket steamer.
It was an honor to have this opportunity to meet, hang out, and learn from this Tribal community in Kerala, India. Thank you!

Yes it is true; Watch Marks Mexican Traditional cooking they also heat up the stones for cooking but no steam generation. You are absolutely right, first time tribal people use heated stones to generate steam. All other methods they use heated stones to cook. Oh Meen Polichath & Mathi chuttath also people heat up the stones and then use the steam to cook the food. Great! I understand all over Kerala people use this method for cooking. Excellent!

I'm an Indian, but a South African Indian and it amazes me to see people of the same ethnicity cooking their staple food so very differently than us. I guess on each continent the traditional and local cuisines differ but the same humbleness in the personalities and characters applies. I've only ever known of South and North Indian dishes because we have restaurants here that caters these dishes from India but yet again their method of cooking is different. Mark, I love watching your videos from around the world and learnt about quite a few new, creative and imaginative dishes that I explained to my 71yr old mum and even she was impressed so I played a few of your videos for her. 2:05 No, Cassava is not native to Kerala or India ,it was an imported crop from Brazil but due to the favorable climate and soil (Doesn't have to do special irrigation or fertilization or even pest control ) it's a big hit in Kerala .
It's also grown in the Caribbean

Marvellous to see this video, these tribal people must be so healthy living on what the jungle provides, and living in such a beautiful environment, the forest looks incredible. They would survive any world catastrophe when many western people have lost the skills to take care of themselves in the wild.
