1. ALICE HEROES CIRCLE
ADDRESS: Across from Heroes Circle, Kingston, Jamaica
INTERVIEWEE: Alice
🇯🇲 COW SKIN & CHICKEN FOOT SOUP: Pour water in a pot. Add jerk seasoning, seasoning salt, scallions, thyme, scotch bonnet peppers and margarine. Add yam, dasheen, coco, carrots, cow skin and chicken foot, sweet potatoes, red peas and pumpkin. Allow it to boil and simmer for 30 minutes.
🇯🇲 BOILED CRAB WITH COCONUT & BOILED CORN: Wash the crabs and place in boiling water. Add jerk seasoning, seasoning salt, scallions, thyme, scotch bonnet peppers and margarine. Allow it to boil for 25 minutes. | Coconut: Break coconut into pieces then place in water. | Boiled corn: Place corn on the cobs in a pot with water. Add scallion, peppers and seasoning salt.
PRICE: Soup - $700 JMD / $4.44 USD | Boiled Crab - $1250 JMD / $7.93 USD

2. MITZI’S STALL
ADDRESS: Across from Heroes Circle, Kingston, Jamaica
🇯🇲 ROAST YAM & SALTFISH: Soak the Saltfish and drain it. Place the yam on the grill for 30-40 minutes. Add Saltfish to the same grill for 15-20 minutes. In a pot, place tomatoes, scotch bonnet peppers, cucumbers, onions and thyme in and put it to boil. Add pieces of roasted fish. Assemble yam and sauce together.

3. ANNIE’S RESTAURANT
ADDRESS: 53 Church Street, Kingston
INTERVIEWEE: Marva
🇯🇲 STEWED LIVER WITH GROUND PROVISIONS: In a skillet, add seasonings and then chopped liver. Add salt, pepper & spices. Serve with boiled vegetables.
🇯🇲 ACKEE & SALTFISH WITH FRIED DUMPLING: Clean ackee. Place the ackee in a pot of salted water to boil for 5-10 minutes. Cut up tomatoes, onions, scotch bonnet peppers and scallion. Place a pan on the fire with oil. Add the seasonings then the saltfish. Add ackee & black pepper. | Fried dumpling: Knead flour, salt, lasco milk powder and baking powder. Place a pot on the fire with oil. Take a piece of the dough and roll it into a ball in your hands. Drop it in the pot to fry.

🇯🇲 COW HEAD & BEANS: Cut the cow head into pieces. Clean & remove fatty parts and eyes, then wash. Chop scallions, thyme, onions and scotch bonnet peppers. Add to the bowl with chopped parts. Add jerk seasoning & browning sauce. Add the seasoned meat in a pot with oil and stir. Add water. Place the lid on the fire for it to pressure for 15 minutes. Add beans and flavor with spices.

I started eating raw ackee at age 3 and continued all my life. You just have to make sure it’s fully open.

I was the head chef for a guy who moved from Jamaica to Minnesota and opened a Jamaican restaurant and this is all throwing me back, I love the way they spice and prepare their food and I learned more about culinary differences in those 5 months than anytime in my life
Id love to learn from a jamaican chef. Pretty much any chef not from the states. Our food seems so straight forward compared to some other places. Not always but I feel like Id learn alot more working with them. Ive only worked at sports bars and its easy work but I would love to expand my cooking skills farther than cooking burgers and whatnot

Honestly if you’ve never been to the Caribbean your first visit has to be Jamaica. The food is on another level, it’s great, cheap and cooked with love!! Don’t listen to the horror stories of certain areas. Give Jamaica a try you will not be disappointed!!!
I'm sorry to say but every time I visit Jamaica I have never found cheap food, that is one of the most expensive Islands to visit. Food is great tho and cooked with love
@@sheniquereid8110 I’m very surprised at that to be honest and I guess you’ve never been to Barbados which is definitely more expensive than JA. £1 gets you over 200 Jamaican dollars to put things into context, £1 gets you close to 3 bajan dollars!!!

@@brandoncurrent3741 oh honestly don’t believe that my friend. I’m from the UK, parents are Jamaican, have been multiple times and never had issues! Jamaicans are friendly and open to everyone. If you stay in Ocho Rios, Montego Bay or Negril (main tourist spots) you’ll have no issues! As with anywhere if you go looking for trouble you’ll undoubtedly find it. Highly recommend Ocho Rios as the place to be 👍🏾

I’m in the Uk and have a Jamaican food truck just round the corner and the Ackee and saltfish with rice and peas is one of my favourite meals of all time and is unlike anything else
I live in the middle of the US and there is a jamaican food truck near me that always seems to be gone when Ive got the money, im not keen on food trucks since getting charged 20 dollars for an order of fish and chips, it was really good but like 10 dollars good. I dont think the jamaican place would be so expensive and if its not im gonna try it sometime.

Girl I'm missing every food watching this. I live in England and went bk for a visit in 2019 prepandemic and I had a fish as my first meal at the beach. I stopped chewing, looked down at the plate and really considered eloping with that plate of fish. What I have been eating all these years I honestly don't know.

I am Cuban and I find that some of their food is similar to ours. Caribbean foods are similar to each other with small differences. It’s good to see Jamaica being represented!
