CARROT CAKE that EVERYONE will LOVE with Cream CHEESE Frosting |Christine Cushing

  • Everyone needs a great Carrot Cake recipe and I wanted to share mine. The twist is my secret ingredient : extra virgin olive oil. This tender, irresistible carrot cake is perfect for Mother's day or any time you want the ideal cake. The mascarpone icing is delicate , creamy and not too sweet. Full recipe
    BELOW:
    Carrot Cake with Extra Virgin Olive oil and Mascarpone Icing :
    4 eggs
    2 tsp. vanilla (10 ml)
    1 1/2 cups sugar (375 ml)
    1 cup extra virgin olive oil (250 ml)
    Grated zest of 1 orange
    3 Tbsp. apple butter (45 ml)
    2 cups all purpose flour (500 ml)
    1/2 tsp. baking soda (2.5 ml)
    1 1/2 tsp. baking powder (7.5 ml)
    ½ tsp. salt (2.5 ml)
    2 tsp. cinnamon (10 ml)
    1 tsp. allspice (5 ml)
    ¼ tsp. clove (2.5 ml)
    1/2 cup grated unsweetened coconut (125 ml)
    14 oz. finely grated carrots (400 gm) - about 4-5 medium carrots
    Preheat oven to 350 D.
    Line 2 x 10 “ cake pans with parchment paper
    With a whisk attachment whip eggs, sugar and vanilla on medium high setting until ribbons appear - about 5-6 minutes. Add the zest and pour the oil in a stream with machine running.
    Add the apple butter and the dry ingredients and switch to paddle attachment. Blend on low speed for 30 seconds just to develop a bit of structure and fully mix the flour.
    Fold in coconut and carrots. Pour mixture into prepared pans and bake at 350 D. for about 35-40 minutes or until springy and tester comes out clean. Cool on wire rack in pan for 30 minutes. Run a knife around the sides of pan and flip onto wire rack. Peel off the paper. Cool completely .
    Mascarpone Frosting :
    3/4 cup mascarpone cream cheese (175 ml)or regular cream cheese - softened.
    finely grated zest of 1 lemon
    1 Tbsp. lemon juice (15 ml)
    1/2 tsp. vanilla extract (2.5 ml)
    1 cup 35 % cream (250 ml)
    1/3 cup icing sugar (80 ml)
    In the stand mixer with the whisk attachment whip cream until peaks begin to form. Add the mascarpone and beat until just smooth. Add icing sugar and vanilla and whip until firm enough to spread. Store in fridge until ready to use. NOTE : if using cream cheese, blend the cheese first to soften before adding to cream. If you want the cake fully covered or if you like more icing, just double the icing recipe.
    Spread half of the cream cheese icing in the middle of cooled cake and top with second layer. Repeat the top of the cake , creating a spiral effect.
    Decorate with walnuts , if desired.
    Chill until ready to serve. Remove from fridge 30 minutes before serving to soften texture.
    Serves 10-12

    Looks really good Christine, never thought about using peppery virgin olive oil, but hey, I trust you. Mascarpone icing is very tasty, I have tried before on a lemon cake. Another tasty recipe, Thank you so much.

      You are welcome. It is important with the peppery olive oil to not have too many bitter notes. So I would avoid- Sicilian or Tuscan oils. Thank you

    Best carrot cake I ever had had walnuts in the cake batter as wel as pineapple! Never have been able to find a recipe with those in it but this one looks good

    Mmmmmm. Love carrot cake. And this looks wonderful! Have you tweaked an oatmeal cake? That's my favorite.

      Have you ever tried an Oatmeal, apple, raisin bread /cake (the difference is in the pan you bake it in and if you frost it or sprinkle brown sugar over the top before you bake it)

    Ooh mascarpone icing, that sounds great!! So does the coconut. The secret to my family recipe is 3 jars of baby food carrots, wheat germ and chopped walnuts. Your turn table looks like fun!

    I will give this a go one day! but first I have to get my Christmas cake made before it is too late.
    I had a great recipe my mam gave me, but lost it a few years ago :( tried a many recipes but not found one that is a good as my mam's
    OR may-be they are not as good because they are not my mam's?
    I do know my mam's was lovely and moist and she never put any liquid on the cake after baking!

    Do you freeze orange/lemon zest? I zest them on a piece of waxed paper, fold the paper up tight (in 1 TBs portions) and put them in freezer bag. It's nice to have and when I'm just eating an orange or just need lemon juice, I don't waste it.

      I do not freeze the zests , since I use so much of both the juices and zests I always seem to have enough. Thanks

    I don't agree with Mascarpone ...ok sorry ..because you need that tart/sour cream cheese provides. Marscarpone is more on the sweeter side.

      That's why I add lemon juice and zest to the cream. It really is amazing
