    Hi!I've already made yudane and will leave it overnight. I have a few questions. 1. Can I substitute the sugar with raw honey as I don't take sugar. 2. If I use my stand mixer it will take up to 30-40mins for it to be fully kneaded? 3. Is it okay to use more mashed sweet potato? Thank you. Can't wait to try this tomorrow!

      Hello,
      Here are my answers:
      1. Yes, you can substitute honey (20-30g) for sugar but you have to lower the amount of milk.
      2. I used Kitchenaid’s stand mixer, the total time for kneading is 30 minutes. I usually start to check the kneading dough closely after 20 minutes. You can start to do the windowpane test if the dough looks smooth and shiny and pull off completely from the sides of the bowl.
      3. You can add more mashed purple sweet potato (10-20g) but it will affect the amount of milk you will use for the recipe.
      If you use honey and add more potato, I suggest you to start adding 90g of milk first and then check for the texture of the dough. Then, you can add more milk 1-2 tsp at a time during the kneading, if the dough is too dry.
      However, for the first time making this bread it is better to follow the original recipe to see how it works for you.
