Hebbar’s recipes are usually crisp like the chips she has just now shown. Each one is less than 2 mins duration where others run for ever. No explaining salt, turmeric, oil etc. straight to the method. 👍👍👍

Originally it is Nendran gayi (a banana breed in Kerala) used to make chips. It is abundantly available in kerala. But difficult to find in rest of India.
If available, its better to use. Else, use normal banana as per video.
Further, suggested to use coconut oil for authentic taste. 😊

I prepare whatever way tastes so good for sometime then after hour or two turns soft not crispy as before/fresh. Please let me know how then market sold or farm made chips remain crispy even in packets for long days n weeks! Should we also keep in containers immediately after heat dissipated! Earlier I had kept in closed container, but didn't remain crispy n turned normal bahka type soft.

Normally what we do is we sprinkle Salt and turmeric water directly to the oil when the chips are almost done.. Then we wait till all the bubbles go away and then take the chips off the oil.. Mind you this method is quite dangerous and is only adviced if the oil in the pan is less than half fill..
