Just so you are aware, in Australia regular oats are not considered Gluten Free and definitely contain gluten. I know this is not the case in some countries. I merely point this out in case a newly diagnosed coeliac is not aware of this fact. I learned this the hard way so always double check products I buy or use. Having said that I’ll adjust some ingredients in these recipes as they look really tasty.

How do I make the batter stick together to make the cookie shape? couldn't' make the batter stick together, even with 1 TBSP extra of honey. I tried patting it together into a rectangle. thinking it might stick together from baking and I could cut it into cookies out of the oven. It didn't so I crumbled it up and called it granola. Delicious granola. But really wanted the cookies dipped into the chocolate with salt flakes. It there is a trick, please let me know. Thanks! Again - it makes delicious granola!

Commenting from the USA! My husband was just diagnosed with diabetes in February and we've been looking for protein heavy snacks or desserts with less sugar or no sugar. This makes me wonder if a no sugar maple syrup would work with this!

I'll make these in mini-muffin pans and still bake them briefly. I'll also add chia and hemp seeds. Given the absorbing nature of these add-ins, I might add a touch of coconut oil. The kitchen is a neverending place of adventure where you almost always can eat your mistakes

Sounds like a handling issue. Oats cannot contain gluten unless they are cross contaminated.
