How to Make Egg Rolls - Homemade Egg Roll Recipe

  • Learn how to make egg rolls right at home! These are as close as I've found to Chinese take-out egg rolls. These are quick to make and any extras can be frozen and reheated to enjoy at a later time.
    What you'll need:
    1 head Napa cabbage (or 8 cups of any other type of cabbage, Bok Choy, etc)
    1 large carrot, grated
    1/4 lb ground pork
    1 Tbsp water
    1 1/2 tsp soy sauce
    1 tsp ground ginger
    1 tsp garlic powder
    1/4 tsp black pepper
    12-14 egg roll wrappers
    Wash and dry the cabbage and cut it into fine shreds with a sharp knife. Put into a large bowl and grate the carrot over top. Mix in and set aside.
    In a large pot brown ground pork with water, soy sauce, garlic powder, ground ginger and black pepper over medium-high heat, stirring constantly and breaking up any large pieces of pork. When done, add in cabbage and carrots. Cook for 2-3 minutes or until cabbage is wilted. Remove from heat and transfer to a colander or strainer and let drain and cool.
    Take your egg roll wrappers and place one on a diagonal. Put about 1/4 cup of filling mixture onto the center of the wrapper. Wet the furthest two edges of wrapper with water and fold the point closest to you over. Fold in both sides and tightly roll up the egg roll. Press edges down to make sure egg roll is sealed well. Set aside and finish rolling the rest of the filling.
    In a cast iron skillet or saute pan, heat about 3/4" of vegetable or peanut oil to 350*F over medium-high heat. Use a thermometer to make sure it's the correct temperature. Deep fry a few egg rolls at a time for about a minute on each side or until they are nicely golden brown and remove to a paper towel lined plate to drain completely. Serve with sweet and sour sauce or hot mustard and enjoy! Makes 12-14 egg rolls. Enjoy!!

    They are not just like you get from a Chinese Restaurant.......THEY'RE BETTER! These look incredible Jason. BTW, if you don't know or your viewers don't know how to make Chinese mustard, all you do is mix regular dry mustard with enough water to give it the consistency you want. It's amazingly easy and just like you get from the restaurants!!

      Thanks Larry! I don't have water, so can I mix Pepsi with that dry mustard? Pepsi is mostly water so don't see why it wouldn't work. Thanks!

    A very good recipe. The only differences I made was I used twice the amount of ground pork (along with the water and soy sauce), I fried them in extra virgin coconut oil, and I cooled them on a wire rack instead of paper towels so as not to take a chance of the rolls getting soggy. They turned out great. Thanks.

    Tried these! The filling was delish! Not over seasoned as other recipes suggest. I did however double up on my eggroll wraps. I had an easier time wrapping my rolls this way. thanks for posting.

    With a big 2.3 lb head of cabbage and two or three carrots, 1 full lb. of meat is better if you like them meaty. I used ground turkey and real fresh garlic and real fresh ginger. This is a good simple and easy recipe. Dip these in some duck sauce and they are as good and probably better than most Chinese takeout places. "Go Ahead" make these. you'll love them.

    You can also add salt to your cabbage and leave it to sit for a while and then right before you use it, squeeze the water out of it. As my chemistry teacher always said: water follows salt.

    I made these last night. My family enjoyed them. The only changes I made was to use pre-shredded carrots in a bag. I also used 1 lb of ground chicken instead of 1/4 lb of ground pork. Also, I didn't let my cabbage mixture cool and my egg rolls were still crispy. Great recipe, thanks!

    if you want to avoid cooking the cabbage, you can do what is done with Korean Kimchi and let the salt the cabbage and let it sit to draw out the water. this will draw the water out without losing the crunchy texture. Just make sure you rinse the cabbage well so you don't end up with super salty egg rolls.

    That is a great recipe and I love your idea about cooking the cabbage a bit and draining it. I'm going to try your recipe but I am going to put chicken breast meat in instead of pork. Either way I know they'll be delicious. Thank you for sharing. :)

    I made this. Nice concise, quick and easy directions. Good job! They came out delicious, just about identical to most take out places. I bought nice duck sauce and they were great. Just wish you didn't say "go ahead" so much. LOL. Look at the video, you keep saying, 'go ahead".

    For those of us who don't eat pork these are also good with ground chicken. I precook chicken thighs in the oven and grind them up in a food processor, along with the soy sauce and about an inch square of fresh ginger root.

    Everyone: Learn from my mistake!
    Don't fry them in High Heat. They will splash regardless of how slowly you put them in, as well as causing a HUGE cloud of smoke.
    Use Medium Heat to prevent this. Doing this will also prevent burning of your egg rolls.

      Stagggger Yeah, never fry on high heat. Use medium-high at the highest and most of all, use a thermometer if you haven't fried before. Even if you have, it's best to use a thermometer just to be safe. Overheating oil can be deadly.

      I'm just not a fan of raw cabbage. Not even in coleslaw. There is one kind of coleslaw that I'll eat but it's drenched in dressing, LOL!!

    You find that after you fry them
    They are still soggy ? I usually do my egg rolls just like this but after the rolling process I freeze than for about 24 hours then after I fry them and that gives me that great crunch factor :-)

      These were crispy when I first cooked them but after about 10 minutes, they start to get a bit soft. Not nearly like the microwave varieties though. I'll have to try freezing them first next time before frying. Thanks for the idea!

      Crouton Crackerjacks Be careful if you do. You have to freeze them on wax or parchment paper and they absolutely cannot touch each other. Otherwise you will break the wrapper like glass when you try to get them apart.
      Also, my local favorite chinese restaurant double wraps the egg rolls to prevent them from getting soft or soggy.
