Focaccia Sandwich with Homemade Pesto 🅡🅔🅒🅘🅟🅔 (Makes one 23 x 14cm focaccia) 150g flour 120g water 30g levain OR 1g Instant Yeast 3g Salt 5g Olive Oil (optional) Toppings: Green Olives (pitted) Smoked Sea salt Pesto : 2 garlic cloves 35g Pine nuts (Toasted) 60g Fresh Basil Leaves 30g Grated Parmesan Reggiano Cheese 100g Extra Virgin Olive Oil A squirt of Lemon Juice 🅜🅔🅣🅗🅞🅓 ғɪʀsᴛ ᴘʀᴏᴏғ ➡️ Mix flour, levain/ instant yeast, water and salt. Set it aside to rest for 30min. ➡️ Do 3 sets of Coil fold, 30 min apart each ➡️ Optional : Overnight cold fermentation in the refrigerator. or continue with sᴇᴄᴏɴᴅ ᴘʀᴏᴏғ ➡️ Proof until (almost) double.
