As someone who's been working in F&B/hospitality for the past decade, I appreciate the insight that Chef Shota provided so much. It's reassuring and heartwarming to know that there are people like him out there who is trying to influence the industry to be less exploitative and more sustainable for the people in it. I can't explain how lovely it was to hear that the joy he received from serving people is his motivation, and though you didn't say as much here, I subscribed because you've shown the same thing in your past videos. im a college student who enjoys cooking. i self taught myself to the point where my friends say i should go to culinary school. i still have a lot to learn, but cooking is therapeutic and seeing ur videos is a true inspiration for me. the true joy seeing you cook and serve people is the same way i feel when i am cooking. im so excited for the pop up and hopefully i get to see you.

Since last June till now I have been working at a restaurant. I care deeply about what I do and how I do it but the learning never stops. The forgetting and fuck ups also never stop. as someone who's also got impostor syndrome and knows exactly how it feels to always be in that self-doubting mindset, i just want to let you know that you deserve every ounce of credit you've gotten so far, and you're more accomplished than you know! while it's a good thing to never let yourself be complacent, sometimes cutting yourself some slack is just as necessary too, especially when your uphill climb is only going to get tougher and less forgiving. being too hard on yourself is just going to further cycle a negative feedback loop, so if you ever find yourself thinking that you're not doing enough or feel you're simply not good enough, i hope you remember that everyone has to start from somewhere, and the worst that you can do is already behind you. you'll only improve and grow, and not everyone can say that they were able to self-cultivate their skills to a point where they could sell out a pop-up or work with seasoned chefs through sheer dedication and will alone. your enthusiasm, skill, and love for the craft shines through everything you do, and i'm sure that's why the likes of budonoki's chefs, chef shota, and more are also happy to take you under their wing - so make sure you give yourself a pat on the back for how far you've come as well. appreciate the videos as always and can't wait to see where your journey goes from here :) much love and keep up the great work

I’ve been enjoying your content for a few months now. I look to different RUclipsrs to cover different styles of cooking and cuisines and you are my go to for fine dining and Asian cuisine. I much prefer long form videos over shorts as we can see things in much greater detail. One thing I would say is your captions move too quickly. I often have to rewind to digest a shot and read the subtitles, but otherwise a very good watch as always.

Everything was awesome! More ted talk would be cool. Its really insightful. I dont work in restaurants personally, but i am involved in distribution, and want to eventually delve deeper into restaurant management. Even just hearing a bit of how the chefs you meet talk about their own businesses and how they view their work is amazing to listen to.

Continuing to ask questions and learn is a life-long pursuit. i'm in the biz as well. Commercial designer, mainly restaurants. When i started out, "the fraud" complex definitely tried to sneak in, especially when dealing with many thousands of cliente dollars. Humility, honesty, curiosity, fun...these traits that have got You to where You are now. You're the real deal, it's easy to see. as someone who's also got impostor syndrome and knows exactly how it feels to always be in that self-doubting mindset, i just want to let you know that you deserve every ounce of credit you've gotten so far, and you're more accomplished than you know! while it's a good thing to never let yourself be complacent, sometimes cutting yourself some slack is just as necessary too, especially when your uphill climb is only going to get tougher and less forgiving.
being too hard on yourself is just going to further cycle a negative feedback loop, so if you ever find yourself thinking that you're not doing enough or feel you're simply not good enough, i hope you remember that everyone has to start from somewhere, and the worst that you can do is already behind you. you'll only improve and grow, and not everyone can say that they were able to self-cultivate their skills to a point where they could sell out a pop-up or work with seasoned chefs through sheer dedication and will alone. your enthusiasm, skill, and love for the craft shines through everything you do, and i'm sure that's why the likes of budonoki's chefs, chef shota, and more are also happy to take you under their wing - so make sure you give yourself a pat on the back for how far you've come as well.

I’ve been enjoying your content for a few months now. I look to different RUclipsrs to cover different styles of cooking and cuisines and you are my go to for fine dining and Asian cuisine. I much prefer long form videos over shorts as we can see things in much greater detail. One thing I would say is your captions move too quickly. I often have to rewind to digest a shot and read the subtitles, but otherwise a very good watch as always.

Everything was awesome! More ted talk would be cool. Its really insightful. I dont work in restaurants personally, but i am involved in distribution, and want to eventually delve deeper into restaurant management. Even just hearing a bit of how the chefs you meet talk about their own businesses and how they view their work is amazing to listen to.

Continuing to ask questions and learn is a life-long pursuit. i'm in the biz as well. Commercial designer, mainly restaurants. When i started out, "the fraud" complex definitely tried to sneak in, especially when dealing with many thousands of cliente dollars. Humility, honesty, curiosity, fun...these traits that have got You to where You are now. You're the real deal, it's easy to see. Yes i think many creatives need alot of alone time which can nurture focus. i sure do, and especially when contemplating future steps. Glad to find Your vlog. Good music too. Cheers. 🇨🇦

The convo with shota might have been my favorite part of any of your vlogs. I think you maybe have a way of making guests very comfortable to talk real shit. Whereas I’ve seen other videos where they just talk in cliches. Would be cool to see you talk to more chefs and just pick brains
