I would like to see more photo shots of the dish while your actually cooking in the pan/pot Even though you explained precisely the spices/ingredients you added to the pan we were just looking at a pot on the stove as u add the ingredients and the finished dish in the pot, it would be nice to see how delicious it looked.
Your recipe is exactly like the way I was taught to make green chili stew in LeDoux New Mexico , I usually use Chicken , but Port is just as wonderful . I don’t measure either .

Most of the time I learned by watching my mom cook, no measurements were used. She would make a stockpot full each time. Approximately 1lb of pork, 2 lbs potatoes, one large can of tomatoes, large white onion diced, lots of garlic, and start with about one cup chile adding more to taste. We like ours spicy.

Getting started on your recipe. I am having to use russet potatoes today, no Yukons available, hope it’s ok. I know they are are a little starchy.
