HATCH GREEN CHILE STEW WITH GROUND BEEF: Simple Recipe

  • This simple recipe for Hatch Green Chile Stew is comfort food at its best. You can make it with any kind of meat you'd like. In this video, I make it with ground beef. Read on for the recipe:
    Hatch Green Chile Stew
    1 lb. ground beef
    1 1/2 cups Hatch green chile (roasted, peeled and chopped)
    4-5 russet potatoes (peeled and cut into bite-sized cubes)
    2 roma tomatoes, diced
    1 medium white or yellow onion, diced small
    3 garlic cloves, minced
    approx. 5 cups beef or chicken broth (or water, plus a cube of beef or chicken bouillon)
    salt to taste (1 1/2 tsp.)
    1/2 tsp pepper
    1 tsp. cumin
    *If you'd like a thick broth, you can add a Tbsp. of all purpose flour
    Place large pot on stovetop over medium high heat. Add enough oil to coat the bottom of the pan. Fry ground beef in pan and break it up as it browns. Add diced onion and let it fry. (If making a thicker broth, add in flour at this point and let cook with meat.) Add minced garlic, Hatch chile, diced tomatoes, potatoes and seasonings. Mix well and let cook down a few minutes. Add liquid, making sure all ingredients are well covered. Let come to boil. Cover with lid and lower heat to low. Let simmer until potatoes are cooked tender. (Approx. 30 minutes) remove from heat and enjoy!

    Wow, i just made this for my sister, who is passing from cancer. Something she asked me for she was so happy .
    She is not eating much, but she was able to eat all of what I gave her that day. It seems that everything that she has asked me for that I have made for her. She has eaten. I'm so glad it's been a hard journey. Watching her, but I am so glad that I am able to cook for her and her family. My family is from New Mexico. We live here in Colorado. My mom passed down a lot of recipes from New Mexico, and I'm one of the ones that picked up all of her good food . Thank you, Marcy, for the good memories that I get when I see some of the stuff that you make, I have even practiced some of these recipes myself. Thanks again!

    I love this recipe. I make this a lot. Day 1 I eat in a bowl with tortillas from local mom and pop place. Day two I thicken with a little flour and make huevos rancheros with it. Many years ago when I was a registered nurse in my twenties I worked in a critical care unit at UNM hospital in Albuquerque. In the cafeteria there was a woman there who made huevos rancheros from her homemade red chile, and also green chile. You could choose. I am 66 yrs old now. I have never had huevos rancheros as good as hers again once I moved away. I am certain those who remember this woman, not only for her food, but she mothered us all and took care of us. Coming up to see us before she went home. One of the loveliest people I ever knew. Thank you so much for the opportunity to think about this memory.

    I’m 68 yrs old grew up in Las Cruces NM I now live on the east coast. I order Hatch Green Chile to cure my fix! Gotta have it! During the cold days I like to make Hatch Green Chile potato soup with chicken broth! Enjoyed your video

    I absolutely love what you did to the front of your home. My in-laws went to college in New Mexico Highlands in the 60's and then lived in Taos. They always have a chili ristra hanging in their kitchen. Thanks for sharing a great recipe.

      I use Chile from Los Lunas and Lemitar. My favorite is the "Sandia Select" cultivar. I use the fresh roasted red - awesome BTW, in pasta dishes and enchiladas, or any prep except for soups/stews. The sweetness of the red does not pair well with soups/stews. The green for everything from soups, stews, etc. Love both in sandwiches as well. I also enjoy @marcyinspired1442 recipe ideas ! Your recipes are wonderful and easy to make.     Marcie is from Las Cruces - about an hour north of where I grew up (now that you can go over Trans Mountain) so this is the food I grew up with - and gosh how I miss it. Can't wait to try this recipe PS edit - La Mesilla where she got her blanket is traditionally held as the cantina where Billy the Kid and Sheriff Pat Garret frequented. The gift shop was the jail Billy was once jailed in.

    I would never have thought to use ground beef in place of pork in green chile stew but I will have to try it. Even though it may not be traditional it looks like it's a great shortcut to making a New Mexico favorite. And those tortillas look amazing, Marcy...I doubt you have to worry about ever forgetting how to make them!

I hope your viewers know that while Hatch is the most famous chile-growing region, delicious, award-winning, chile is grown all over the state. Would love to see some recipes featuring chile from Lemitar, Chimayo, Deming, Tucumcari, Farmington, and elsewhere in New Mexico.     A favorite of mine for sure. All of my Aunties would make this “simple dish” and many others of your recipes. My grandparents and a few Aunts and Uncles were born in NM-all your dishes feel and remind me of the families’ home 🙏🏽😇

    I just got tears watching this. My grandparents had land in NM and grew chile. Unfortunately, since my grandma passed, we don't get chile. But this just brought back the best memories when my grandma made her fresh tortillas and put butter and rolled it up and gave it to me and my cousins. 😢❤ thank you. 😊

    Hi! I’m from Wisconsin! I have a great interest in your cooking, especially with the hot pepper. I’ve actually tried some hot pepper dishes before and it was so delicious but I don’t know much about the green chili.     Besides being served at home, this “simple dish” was always a staple at funeral dinners too-even in Wyoming!.We’re fortunate in Colorado to have various types of green chile available. We purchased roasted hot Hatch chile this year and was glad I wore gloves as I peeled them. The heat seeped through and my hands throbbed a bit. We thaw the frozen chile and flavor it with salt and granulated garlic to eat it mostly as a side dish on eggs and on tortillas.

    Fantastic! I wish my Dad was still here with us, he would have absolutely loved this. Every year, my Dad would go with us to get our roasted hatch chiles. At home, he would put on his old sausage, making apron & we would have the best time skinning the chiles. Thanks for a terrific recipe!

    This looks awesome, Marcy. I already wrote down your recipe. What I like about your recipes is that you use mostly Green chilies instead of tomatillos. From what I've seen anyway. There is a difference and yours is the best.

    Hahahahaha. Littery just turned the TV on tonthis..as I sit down with a fresh bowl of green chile stew, tortillas from the Albuquerque Tortilla factory, and a cold Modelo. Picked up my Chile a couple weeks ago..and yes, picked tortillas when I was Albuquerque a couple weeks ago. Keeping the tradition alive here in California.

    I have some leftover hamburger, a mix of green chilis, potatoes I need to use up. Think I'll deglaze before adding the Chili's with white wine. Also will add cumin at the beginning to bloom the spice.

      Supplemental..
      ...they have my ship, oops, not Star Trek, Kahn!! 😂.
      I used a mortar and pestle and crushed some black pepper along with juniper berries. I slowly heated the dutch oven, sprinkled in the crushed black pepper and juniper berries and along with whole cumin, I let the spices bloom. Everything else is the same as your recipe. I did add wine after adding the potatoes and deglazed. Added chicken broth, let it cook for 30 min. I finished it off with fresh lime and topped with creme fraiche.

    I absolutely love Hatch green chile, but once again I have failed to stock up. Thankfully my Costco carries the 505 Hatch green chiles. Also, I do want to say, I appreciate your message board under the monitor. God is good and worthy to be praised.

      Try Fresh Chile Co.
      505 is not Hatch Valley certified so they don't necessarily have to use Hatch grown chile, but at least use chiles grown from Hatch seeds,and filled with sugar and preservatives.
      Fresh Chile Co also sells and ships everywhere and sells freeze dried Chile and right now selling fresh unroasted chile and frozen roasted. Of course jarred Chile too which tastes far better than 505.

    My sister-in-law lives in Mora, a tiny little town in NM. She's a wonderful cook. We were just there 2 weeks ago, it was great to get out of the Texas heat. I came home with a huge bag of peppers, and I needed to get them roasted and peeled.

    Looks delicious! I'm from Colorado and we are able to get Hatch green chile here. This year, I didn't though and I'm regretting it! But, I'll be canning tomatoes with one of my daughters. Today, I'm roasting jalapenos from the garden. I chop them up and put them in ice cube trays. I still have my hatch chiles, and I do the same too. Have you tried making chile rellenos from Hatch chile? I don't like poblano very much so I make them with Hatch chiles. So good! I'm glad I found your site.

    I ordered the Hatch Green Chili Powder. It didn’t come with a recipe, so fall and winter is going to be interesting. I miss my tamales but found a man who knows a family whose grandmother makes the best.🤣🦋🙏🏻♥️

    I was able to make this using a 4oz can of Hatch chilies and about 3/4 cup canned fire roasted tomatoes because that’s what I had on hand. I used chicken broth. It was still very good.

    I’m not exactly stocked up but I do have enough frozen to make a pot of stew. One of our grocery stores in ETX gets large shipments of HGC’s every summer so ma able to get them

    Hi Marcy, so I love the flavor of Hatch chilies, but the heat becomes overwhelming to us! What do you recommend to help with that problem? I have a jar of the chilies that I bought at Costco last year & am afraid to use it!!!!!! HELP!!!!!!!!! Thank you! George

    Well done Marcy! Great recipe!!! My wife doesn’t eat meat so I use Aji tuna or the meat substitutes (Beyond, Impossible).

    I've always used cubed pork, but this looks like a quick and easy alternative. Definitely going to give it a try since I have some Hatch chiles in the freezer (and yes, I stocked up this year). 💕Also, I have a dried red chile wreath from New Mexico hanging in my dinning room. 🌶

    I already have a GCS recipe but had to watch just to remind me of home. I don't know if you do this or not but I leave some of my roasted Green Chiles whole for enchiladas, burgers, and what not. The chopped ones, though, I place in muffin tins to freeze then place the "pucks" in a freezer bag so I have portion control and don't have to thaw out a large amount. Keep cooking NM. Love your vids. Oh and the porch looks great.

    There's no high -medium here they go with that medium high low myth.? There's only one stove settings is. .(high,medium , and low,)there's no such thing as medium low .😊 or high medium😊.😊

    Exactly how I make mine, but I also add a couple of roasted serranos, a roasted jalapeño, a raw habanero and 3-5 red chile de arbols. It kicks up the flavor and the heat.....
