- How to make Over The Top Chili. We combine our meats and season. We then combine all Chili ingredients including a homemade Chili Seasoning and put it all on the Drum Smoker. Smoke it for just over five hours and it came out delicious.

I like using the royal oak tumble weed for starters they burn clean and starts the fire quicker. I started off using the sender wax cube years ago and found out that they are only wax and charcoal lighter fluid, so I stopped using it and started with the tumble weeds .. much better

That really looked good. Why are you not eating rice with it or is that not “American” to do that. You’ll get more meals out of it that way.

It's a 6.6 qt. Commercial Chef. Works good and not outrageously priced.
Just wondering why the pork sausage if for flavor or fat? Couldn't you just season up your ground beef for flavor or use a fattier content ground beef.
You absolutely could. I like to add the pork to the leaner beef to add more fat and contribute to the flavor profile.
Not gonna lie you had me on the recipe until you added the kidney bean juice. Yea thats a no no. Also using "Chili Beans" sauce and all takes a step out and makes for way better chili. Finally why do you keep putting the top cooking rack back into the smoker? Im confused by this since you are not cooking on it.
It's a long smoke that's why I do juice and all. The reason I put the top rack in is because it holds my thermometer. I find it to be more accurate in the top position. Thanks for the feedback
