I'll show you Drum Smoker DIY tips and tricks I've learned along the way. If you have a different Smoker or are thinking about building a Drum Smoker my videos will help you on your journey. Smoked Biscuits and Gravy on the Drum Smoker
How to Smoke Biscuits and Gravy. First thing we have to do is prep the Sausage. Two pounds of Sausage, fresh Sage, fresh Thyme, Garlic, Onion, Red Pepper Flakes, Nutmeg, Salt and Pepper. The meat goes in the fridge for one hour. Time to fire up the Drum Smoker. After the meat has been in the fridge for an hour we put it on the Smoker. At the one hour mark we put our Gravy mixture on the smoker. Stirring every forty five minutes until the Sausage hits 165° internal. We then crumble the meat and put immediately into the Gravy. Stirring every thirty minutes until the Gravy starts to thicken. Time to prep the Biscuits, out of the tube they come and get put into a Cast Iron pan. On the Smoker ...

How to Smoke St. Louis Style Ribs. First we make a South of the Border inspired Rub. This includes Ancho Chili, Chipotle, Jalapeno and Cayenne seasonings. Good tips there for anyone wanting to take care of their UDS. I do basically the same thing you do. I keep my drum under a carport with a cover on it. My last drum lasted 9 years by following what you are advocating. The best thing you can do is keep the ash and moisture out of the drum to prevent corrosion. I try to get the ash out at least once a month.
I totally agree, keep it dry, keep it oiled, and clean it out and it will last . Thanks for watching

Why 2 exhaust's? 1 short & 1 long .
I have two Drum Smokers. The first one I built has the shorter exhaust. I went with a longer pipe on the second Drum. I alternate between the two when I smoke. Thanks for watching

Oh man! Smoked chicken AND smoked queso? It doesn't get much better on Taco Tuesday than that. When I smoke queso I add a half pound of chorizo to it and a half pound of Jimmy Dean hot breakfast sausage. I mix it with pepper jack, cream, and Velveeta Queso Blanco. I am going to have to try your recipe and see what the Fam thinks.
This Queso is a good cheesy taco topping , yours sounds like it's a meaty dip version . Sounds good.

Looked great!!! I think I'll make these this weekend. One question, though, does closing your bottom vent gelp with crisping up the bacon
The reason I close the bottom vent is because of the Bacon dripping down. If you leave it open it becomes a Rocket Engine and will shoot flames up. That Bacon grease is like gasoline,lol. Thanks for watching

Hi Steve!, can I re-use the Lid gasket on the Smoker while it’s cooking? Will the heat melt away the Gasket? Just wondering?, thanks 😊!
I don't think the gasket would hold up to the heat . It might start to melt and give off some funky odor, which could end up in your food. As long as your lid is not warped it should seal good. I have heard of people trying oven door gaskets but not sure about the success rate of doing that. Thanks for watching.

Thanks for the video, really interesting. But, I”m from the country where the barbecue culture is just starting, and here is almost no uds smokers, and I never tried meat from it. So my biggest question - what is the difference between uds and Weber original kettle (I own it for 5 years, and really love it). I wanna experience more things about barbecue , and try to build uds myself. Thanks.
Thanks so much for watching. The Weber Kettle is more of a grill. Although you can use it so that the coals are indirect and get a Smoker affect. The UDS is more for low and slow cooking much more like a traditional smoker.

Another great video Steve. I have a couple of questions. 1. Did you notice any difference in flavor in a pork butt that was boneless? 2. How do you like the BBQ gloves you have been using? I have been looking around for a good pair myself. 3. How much charcoal was left at the end of the cook? 4. I like the idea of finishing up the butt in a covered foil pan to capture the juice from the pork. Did you add any of the juices back into the bbq after it was pulled? Keep up the good work. Thanks!
I didn't notice any difference in the flavor by this being boneless. I actually wanted bone in though but this is what the wife picked up for me at the store so I went with it. I do like the gloves they are pretty tight on the forearms but I actually like that. Not sure how much Charcoal was left this video was shot several weeks ago but I do know that the Charcoal Basket will hold a lot of coals and will burn along time. I actually did separate the juice from the fat and add it back to the meat once I pulled it all apart . I just didn't show it. Thanks for watching , I appreciate it!

Hello, great video, I'm in the process of building a smoker, I have burned the barrel twice and the liner is burned out but it's still black inside, I still need to give it a good cleaning just wondering if it needs to be down to bare metal. Thanks
I would rinse it out real good and see what your left with. At that point hit with some 50 grit sandpaper . Bare metal is ideal but if it won't come out at that point than it's not coming out. Spray oil the inside and start the seasoning process. The inside will take on a texture just like a cast iron pan .good luck and thanks for watching.

Might be easier to put that expanded metal on its side to put those bolts in. Gives you an extra hand.
