  • Sangak bread is a traditional Iranian flatbread known for its distinctive texture and flavor. Made from whole wheat flour, water, salt, and a leavening agent, this bread is typically baked on a bed of small river stones in a special oven. The stones create an uneven surface, giving Sangak its characteristic dimpled appearance and crispy texture. It is often enjoyed fresh and warm, accompanying various Iranian dishes such as kebabs, stews, and cheeses. Sangak's unique baking method and wholesome ingredients make it a beloved staple in Iranian cuisine, appreciated for its health benefits and rustic taste.
The history of Sangak bread dates back to ancient Persia, believed to have originated during the Sassanian Empire (224-651 AD). The name "Sangak" comes from the Persian word "sang," meaning "stone," referring to the traditional method of baking bread on hot stones. This technique was initially developed for the Persian army, providing soldiers with a portable, nutritious, and long-lasting food source. Over centuries, Sangak became a popular staple across Iran, transcending its military origins to become a cherished part of daily life and Persian culinary heritage. Today, it continues to be baked using traditional methods, preserving its historical significance and cultural value.
