- Winter life in Alaska is a busy season, from ice fishing to keeping up with snow removal around the cabin. With the continued blustery weather outdoors, we spend a day indoors making savory homemade chicken stock to replenish our supply. For dessert we whip up a delicious coconut and spaghetti squash custard pie.
~ Coconut Spaghetti Squash Custard Pie Recipe ~
Filling:
1 large Spaghetti Squash (or 2 cups flesh cooked and strained)
14 oz can of coconut milk
1/2 cup half and half
4 eggs
1/2 cup sugar
1/3 cup cornstarch
1/8 tsp kosher salt
1 tbsp butter
1 tsp vanilla
1/8 tsp cinnamon
Pie Dough:
1 1/2 cups all purpose flour
6 tbsp butter (or a few heaping spoonful's of lard)
1/8 tsp kosher salt
5-6 tbsp cold water

I enjoy the “daily life” part of your vlogs the best. The cooking, clearing snow, chopping wood, maintaining the homestead, the chickens (and your pups of course!!), the garden and the bees. We live in Switzerland and i really never liked the cold or the snow that much (unless skiing you know). Especially since we have kids, i always felt like winter weather just ruined our outdoor plans (we are very outdoorsy). Ever since i watch your channel i started loving and appreciating winter and any weather really. You guys never seem to let the weather getting in the way of your fun..now, when its raining, i say no problem, put on your rain pants and jump in the puddles...snowing and freezing? snow suits on, winter walkies with our dogs, snow angels, collecting fallen pine cones...as long as youre dressed appropriately, its always fun.🥰

In Switzerland as well, but have always loved the snow and cold (with the right equipment). I guess growing up in New England prepared me for it.
Dressing appropriately is always important, but our lives get so busy, a lot of us just don't stop actively think about what we may need. Best advice I ever got was to dress in layers, so that you can layer up or down for whatever you need. Alas, that advice never says what to do about the layers you don't need at that moment! I think a light backpack, ideally one with an expansion zipper, being carried everywhere as a constant accessory is a good idea. They have those "stuff themselves into their own pocket-sized pouch" bags, but they're always one strap deals, so it's hard to wear as a backpack...but it's hard to resist something that looks like a strawberry when it's all stuffed away!

@@lukewoodford7874 Here in the north USA and ever since the big C hit hubby and I have walked lake trails and beaches , etc , every wkend to get out and not live locked up , whether it is hot, cold we dress for the weather and it has given me a new appreciation for nature in all kinds of weather. I have really grown very fond of winter hiking and invested in great winter clothing and when dressed properly winter is very enjoyable.

The one thing I really enjoy about your channel is that you show living Alaska. Not just your homestead but the area around you and the culture.

IMHO, this is the best “off grid living” style vlog on the internet. I love how real and honest the content is. The editing is very good too (and gets better every year). The first episode I saw was the leaving Oregon episode and I’ve seen every episode since. Please keep em coming.

Love watching /following you! My daughter in law along with my grandchildren are moving to Barrow, Alaska next month! They are in Kotzebue right now. I gate that they are so far away but watching you helps me realize they’ll be all right! They left South Carolina last year and I miss them so much!

I'm your neighbor in St Paul, and have had to do soooo much snow removal this winter. Much of which was water removal, because we keep getting these freak thawing days, followed by an artic blast, which means dangerous ice on the walkways and driveway. Gotta keep an eye on that thermometer! Winter is not over yet in Minnesota.
Those hens did NOT like being disturbed and their eggs being stolen! 55 years ago Alaska might have been possible but 55 years ago we would not have had all the goodies available to make living off grid easier! Love the videos and watching you living your dream!😊

I'm in Northern Indiana and we had about 12-14 inches of snow that melted away the past few days. This morning we got freezing rain that quickly turned to snow and is currently dumping lots of heavy snow. Treacherous roads here today...super slippery.

Hello fellow Missourian! Just moved to Montana, but my husband was born and raised in MO and I lived for there for over 10 years! 4 inches of snow is pretty good for that area! You mostly get ice! Haha!

Love your nature photography. It is so peaceful! Although I think spaghetti squash is the worst, that looks like a wonderfully inventive way of using it. Enjoying watching you guys have fun in that Winter Wonderland.

You guys are such great cooks. I’m glad to see you’ve found a way to make spaghetti squash palatable. I’ve never been much of a fan either.
Arielle makes amazing pie crusts & her technique is perfect. Have you ever added @1 tablespoon of white vinegar to the crust? It makes it a little more flaky, I’ve found. A tblsp of vodka also works.
Also, a fun project I’ve started is making my own vanilla extract. Just buy a bunch of vanilla beans online-they’re surprisingly affordable, especially if you get grade B beans, which aren’t pretty, but work for this. Put them in a tall jar-taller than the beans-and add vodka to cover. Keep in a dark place if possible. It takes a few months, but the result is amazing. And you can fish out a vanilla bean from time to time & scrape the seeds out to use in baking. I started with @15 beans. I could really taste the difference.

Beautiful PIE! Also scratch broth! I recently made ckn broth using raw chicken feet and Instant Pot .. came out great .. froze 6 pints and frig 2 pints.
