@@punjab1captain Easier, sure, but you don't crisp both sides, which is the point of a smashburger. On top of that he could have at least cooked the tortilla and used the cooked side on top of the burger. Taking shortcuts rarely results in a better end product.

It is a cheddar that isn’t aged for long. I’m guessing around 12 months maybe less. It is more of a yellow than white cheddar and yes they are different.
