    How to soften dried tomatoes?
    Here's how to revive sun-dried tomatoes:
    Bring to a boil and immerse the tomatoes in water for 1 minute OR leave them for 30 minutes soaking in water and vinegar; drain and dry them carefully; season them to your liking (garlic, oil, capers, basil, oregano); keep in the fridge for 3/4 days

      Yes definitely the right time, if is too hot I would recommend to don't leave all day under the sun otherwise they will dry out to fast

    Thank you for your recipe and time ,best video of drying tomatoes , because you used the water and vinegar which creates an acid enviroment which also in return does not allow for mould and botulism to thrive .

    I dry my tomatoes in a drying cage but some of them got moldy. :( I made sure to use enough salt and brought them into the house every night. Any tips on how to avoid mold? I've read that I can dip the tomatoes in vinegar to acidify them before sun drying. Would that work? Thank you!

      You need heaps of salt, when you think you've used lot's add more. I actually let mine sit in a salt brine, before putting out in the sun. Then add more salt.

      Hi you can store It in a sterille jar of oil and you can add some chilli pepper in the oil for taste if you like .

      He had the video of that here at some point, I remember watching it to preserve my san marzanos I grew, after the vinager water bath, he dried them in the sun for another 4 hrs,..
      Then in a Mason jar he layered the tomatoes with oregano and sliced garlic with a few bay leaves then filled the jar with olive oil. He might have taken the video down to keep the secret recipe a secret 🤫

    Is the boiling with vinegar to preserve and kill any bacteria? I always loved visiting our older relatives in Sicily who made these with basil and the oil. Thanks for teaching to a younger generation!

      Yes, sure vinegar and boiling with water will help to kill all the bacteria and also will preserve for longer time , and also I found out that tomatoes will be bit more moist instead of been very dry

    I'm in southeastern NC where it is extremely humid. Also, what about flies? Do you guys not have that concern there? I would like to preserve some of my tomatoes this way but I'm having trouble in my area.

      If you have some materials or budget youe can maybe make rack with 3 layers of fine screen mesh.
      1st layer to keep the tomatoes off the ground
      2nd layer is where the tomatoes placed
      3rd layer covers the tomatoes.

    What do you do if you live in the UK where the weather is only 10 degrees

      Look UK is quite humid so you could try to leave outside only from 12pm to 3 pm, it will take more time but you should be able to get the results. Otherwise you can dry in the oven at 100°

    Dried tomatoes have an average caloric content, in fact they contain about 258 calories per 100 grams. Inside them there is a higher percentage of carbohydrates, of which a good part are sugars, followed by proteins, fibers and fats.

    I followed the instructions the tomatoes were drying well then on the 4th day I have some mould on 2 of the tomatoes. I have followed your instructions twice before with no problem. The only thing I have done different is add a little more salt on the 3rd day 🤷🏼‍♀️. Any ideas

    How to avoid Botox in dried tomatoes?
    As for dried tomatoes, if blanched in water and vinegar they become absolutely safe. Also in this case, any flavorings used should undergo the same treatment.

    That screen is good. But I would have another wood under it, where I shall put the tomatoes. Then put the screen over them so that flies and other insects will not get to them. The flies are what will create molds in the tomatoes.

    Not enough details. You say your temperature is "very hot". Give us a range of temps that are high enough to accomplish this. Why the salt? Why the vinegar bath? How do you store them?

      We didn't have time to explain how to store but anyway after all the process in the video you can mix some erbs like oregano basil chilly or anything you like then put in the jar and fill up with olive oil.
      Good temperature is between 20 to 37°. Salt is necessary for the drying process, vinegar bath will kill bacteria and remove and dust from being outside.

      Actually bread was created in Egypt ,and topped bread in mesopotamia but we credited italy for pizza as we know it today.
      Most spices are native to india.
      Also we credit tortilla to Mexico although wheat didn't exist in the Americas before Colombus,and tortilla the name and the concept is Spanish.
      But we can't just keeping going back and back in time.
