I did some in a airfryer, 100° c for 10 min at a time with total cool down in between, takes ages and I'm not sure it's worth al the energy, but it tastes great, I ate it for snacks.
You can put a piece of mesh screen or cheesecloth on top of the trays or boxes that you line with the tomatoes. I've seen shallow boxes with screens on top made for just this purpose.
You've extracted all the moisture from them. This is the whole point of dehydrating vegetables and herbs to the point that they can't support the growth of bacteria because they contain too-little moisture. If you're nervous about it, you could pre-soak them in citric acid?
I'd love to make these at home, but alas I live in Scotland... leaving them out in the sun for 3 days would take me about 4 months.
Same here I live in Michigan USA and it would take 6 months❤❤
That’s what ovens are for. 120c for 3.5 hours should do it. I’m in Scotland too - I preserve everything for winter
I'm in a very dull, grey (and chilly) English Midlands City. No sun and not sure about traffic fumes either!

How do you keep the insects off of the tomatoes while they are drying?
Place a net over it might help? Some of my family have built boxes for drying. It has a wooden frame with metal gauze over it to keep flies at bay.

San Marzano. They're wonderful for preserving and canning/bottling. They're a bit like Roma but more flavour and drier.
What about flies and gnats? Is there something to protect the tomatoes from those pests?😊
