Pasta All'amatricana is a very classic Italian pasta dish that goes back years and years. It's one of those pasta dishes, much like carbonara, that is so beautifully simple, but delivers no matter what mood you’re in, or what time of year it is. This is an absolute must have in the repertoire - give it a go, you won't look back!

I love how he plates up the dish nicely and then just eats from the pan.

I was thrilled when we met the man himself (and took a photo together) whilst in London in July last year. We had just traveled throughout Italy for 3 weeks, yet we ran into him in our hotel lobby in London on the way home to Australia, go figure!

It’s a different version than many are used to. It’s a chopped tomato on pasta dish. The popular version is the tomato sauce version

The longer I cook Italian food, the more I realise that the simpler I make it, the better it is. There is a lot to love about French food...a lot....but geez, Italian food I think has it covered for the home cook

Not really. This is so deviated from what an Amatriciana is, that it isn't the same dish at all. It's not necessarily about tradition, he has just created something completely different, which no doubt is delicious, but not the same thing. So why call it an Amatriciana?

This is not an amatriciana. This is overcooked pasta with bacon, tomato and onion. It has nothing to do with his Majesty Amatriciana

Also there's a typo in the title. There's an "i" missing after the "c". Italian uses "ci" for the sound of "tshi". "Alla matricana" (without the i) would sound like "All-Ah-Mattree-kan-a"

This dish has a cool name. Amatricana is a nice word. I love italy! I wanna go there traveling before i get too old. Rome seems awe-some! @@sebi77777this is not at all the traditional version will be using 4 ingredients, guanciale, black pepper corns toasted and crushed, (pasta water), tomatoes peeled, pecorino Romano. Basil is okay is commonly added. Onion is a big no for me, but I’m sure gennaro knows what he’s doing here, goes to show how a real Italian chef is looser with the rules than half the pretenders huh? Lol

The title is a clickbait. It should be “Gennaro’s recipe of pasta all’amatriciana” or “Gennaro’s variation on pasta all’amatriciana” and not just “pasta all’amatriciana”. As this is in no way a real pasta all’amatriciana. The real one is even simpler. There is no olive oil, no onion, no parsley or basil. Just pig cheek, some chili, peeled tomatoes or a lot of juicy red fresh tomatoes, and a lot of pecorino cheese.

@@DiegoCaceresAE As I said I love to see him cook, but a recipe is a recipe, especially if historically attached to a territory...I'm sorry but (personally) this time he was wrong, he could do the same dish without having to call it "amatriciana", and the fact that he says (in my own way) is not an excuse. I repeat, personal opinion only for this video.
