For those of y'all have been to one of my Paula Deen's Family Kitchens, what is your must-order dish?
We dined at Lady and Sons in Savannah for the first time last week. To be honest, after our meal, we could not pick a favorite dish due to the fact that everything was simply that good!! We had the fried chicken (best ever) and pot roast, creamed potatoes, creamed corn, green beans and salad. We truly discussed selection of a favorite dish, but everything was so good that we could not call it; it was an excellent meal in all regards!!! (and your staff is so lovely).
Waiting to go to the one in Pigeon Forge! Can’t wait Paula, my wife has been to your restaurant in Savannah!
Fried green tomatoes and the chicken!
It is all southern delicious, but I have to have my greens with pepper vinegar and cornbread.
My favorite meats are the pork chops and your fried chicken. It's so hard to decide which one to get when I eat at your restaurant in Pigeon Forge. 😁

Grandma and momma used cast iron frying pans afterwards they made gravy and mashed potatoes.,homegrown green beans, slices of tomatoes.

I went to paula deens family kitchen 2 weeks ago in panama city,fl. We got the pork chops and the fried chicken. These pork chops were AMAZING! all of the sides and the desserts were wonderful as well. Thank you so much for the recipe.

I guess I was not expecting the pork chops at the restaurant to be as good as they were. Totally blown away and definitely as good as the chicken!
Ohhhh Paula you definitely have inspired me! I haven't made pork chops in so long! And yes, habits are hard to break! My grandma ALWAYS cooked pork until it was wellllllllll beyond done! I'm talking till it was dryer than the desert!
My sister in law did that to every meat she cooked. She would grill hamburgers and then put them in the oven. Needless to say they were hard as Elly Mae Clampette biscuit.

I have never used buttermilk when cooking pork chops. I will try that the next time. Those chops looks delish. My mouth was salivating! lol...
Try buttermilk on cubed steak too
Makes it more tender and juicy.
I love pork chops. I make mine the same way except I dont use celery salt. That little bit of cayenne makes a world of difference. I want to go to one of the Family Kitchens so bad. Hopefully I will make it there one day.

Oh those are gorgeous pork chops!!! I have never had a ours chop soaked in buttermilk, then flour and seasonings, and deep fried! I’ve always said I don’t like pork chops, but this I’ve got to try! Oh my!

Put salt directly on them while holding your mouth open to help draw out the moisture. It works great. My grandmother told us this.

Just an FYI...If you dredge your porkchops 🥩 in the flour first then a egg mixture then back into your seasoned flour with cornstarch added into the seasoned flour...your porkchops 🥩 or any meat your frying will turn out super crunchy and crispy. Really delicious 😋

The butchers trim closer, because people want to avoid all the fat they can! Cholesterol and waistlines are important! Frying them is delicious, but I grill to lower fat content.
@@marymargaretblumhorst5359 but the latest thinking is that the fat you eat does not give you cholestrol. Dr Atkins always said that and it seems he has been vindicated. Also, fat doesnt make you fat. Carbs do. I almost starved myself trying to lose weight. Then one day I just happened to see Dr Atkins talking to Larry King on tv. I thought I would give his diet a try. The wright just melted off me especially around my middle. When I had my
checkup at the doctor, my blood pressure was down and my cholestrol was normal. That was over 20 years ago and I have been following the LCHF way of life ever since.
Paula, there is no need to pound/tenderize your chops. Instead use Lime Juice on both sides, just rub it into each chop, let it rest to room temperature and then add your seasonings before frying, baking, roasting them. The Lime Juice is all the tenderizer you need. Lime juice is also great on all types of steaks for tenderizing as well. It works well without any pounding to the meats. Enjoy! (Also there is no flavor of the lime juice on the meats when eating them. You can't tell Lime Juice was used for tenderizer)
I use an unseason meat tenderizer let my meats set sometimes an hour or over

I always thought they were from accidentally biting your tongue but boy do they hurt 😢 your pork chops look delicious 😋 and they look easy enough to make 👍 one of my families favorite meats. Mrs. Paula, I can't thank you enough for this recipe! I'm a good cook, but no matter what I have tried, every time I have tried pork chops, they turn out tough and dry. I've watched you since the year 2000, so I don't know why I didn't think to run straight to you and see if you had a good solution for this! Either way, I'm so glad I found this last night. Usually, if I'm making pork chops, I just go ahead and do baked pork chops and rice, because at least they don't turn out as dry, but there is nothing in this world that will substitute when you are craving fried pork chops. I had set out chops, planning to just bake them as usual, but I thought, "I'm gonna fry those dadgum chops, and finally get it right, even if it kills me!"
The buttermilk was the main thing. I completely agree with you that it helps tenderize the meat. I let my chops sit in it for a couple hours before I fried them, turning them occasionally, and it was fantastic. Your video also allowed me the opportunity to learn that I was not letting my oil get hot enough before adding my chops. I had always turned it on and let it heat up, and I thought it was hot enough, because when I put my chops in, they would start to bubble a little around the edges, but nothing like the instant sizzle that you got. And if you put them in before your oil is hot enough, that means they are going to have to cook longer before they are done, which is going to result in a tough, dry chop. This is also the first time I used a meat thermometer to check them before I took them out of the oil. I've always just judged their doneness on the color before, and they were either still raw near the bone, or most of the time, they were overdone and dry. My mother is from the same generation as you, so she has preached to me about cooking the snot out of pork my whole life, and you aren't kidding that old habits die hard! 😂 There was no pink left in these, and yet they were juicy and tender. I made gravy (just in case), but they truly didn't even need it. Thank you so, so much! I will never fry pork chops any other way! You're just the best! This Christmas season, I thank Jesus for what a gift you are to the world, and I hope you and Michael and your family have a blessed, joyful holiday! ❤️

I made these pork chops exactly as demonstrated by Paula Deen in this video ... and they were delicious! Having a quick-read digital thermometer is key. I did get a little heavy handed with the cayenne but they were still good.

Well, unfortunately the one in San Antonio, Texas closed. I moved back to SA in 2016 after the passing of my mother. My sister told me about Paula’s restaurant and with moving and forgetting I heard the restaurant was closed.
I will add that this is one of my favorite ways to coat a pork chop! Love the celery seed.

My family and I were at Lady and Sons in May, enjoyed the meatloaf.
I live in Savannah and I would serve her son, Bobby, in the restaurant that I was employed by at the time, roughly around the year 2000. He was a very kind and most generous young man. He would even request me when he entered the establishment. I've been tempted to apply for a serving position in the downtown Savannah area. I could see myself really enjoying myself working in that friendly atmosphere. Bobby, if you read this, I used to work at Shoneys Restaurant on Abercorn about 20 years ago. You are awesome! Your mom did right by you and your brother, obviously and she deserves continued success in her life. Your tamily is warm and embracing. Much more success to all of you. God Bless.

Been a BIG FAN for years . NOTHING has EVER CHANGED THAT ! Your recipes are fantastic and I love the Rapport you have with your sons we also have three sons although we did lose one of our precious boys in 2013. Taught my boys to cook , from the time they were old enough to get the concept , they had one night each week , they were " in charge of dinner " ! From shopping for ingredients to mixing spices . Also Once a month they had to choose an " ethnic dish " from what ever country they chose . On those nights they had to give information on the country of " origin " for menu choice !

Wonderful!! LOOKS SO DELICIOUSLY SOUTHERN YUM! I grew up an Atlanta Native! Great to see Paula's Friend Pork Chops done the traditional way! I am surprised though she did not use her air fryer or mention it as an alternative! I like to bake my pork chops in the oven instead of frying in grease.

perfect Paula! Just perfect! I remember momma telling to be sure and “cook my pork all the way through!” I mean trichinosis was in the pigs 🐽…yikes! Fried Chicken and the heavenly meat-loaf! I remember washing dishes after pork-chop night man oh man greasy stove! And some on the floor.my first. Job was a kitchen -boy. I washed all the dishes, pots and huge pans, and then after placing all the dishes up, Cari and I mopped the entire restaurant and kitchen. We were soaked with water and soap!, and loved it…Gr8 job and I loved it. Those were the days in high point memorial hospital NC 🏥…1972 I lived in the Furniture Capitol of the world!

Celery seeds and pork have a real affinity for eachother. Celery seeds was pronounced in a Cajun seasoning I used to use and I’d air fry the chops and let me tel you when that bright celery flavor hit on the crispy pork fat it was mesmerizing.

Paula. See your dentist about your blisters.They might be apthous(spelling) ulcers,which are recurring & can be treated. My periodontist to me not to use whitening toothpaste baking soda with salt & peroxide & that helped me tremendously. I ate too much pineapple in August while in Naples & my Dr. phoned in a generic Mycostatin Oral Suspension which you swish & swallow & it works great. I think dry mouth contributes to the little ulcers & Biotene makes a spray & several other products for dry mouth. My eye Dr. shared with me it could be from Roseca,which she says can cause dry eye or visa versa. But you need to get it checked out so u know what you're treating & what to use to treat it! Once a nurse,always a nurse even after you retire. Love your cooking shows & your being yourself...I mean who else could we be if not ourselves? You have natural Southern charisma & a wonderful way around the kitchen.I enjoy your shows & your recipies & the boys,too,and your charming husband! Bet that tuna salad is scrumptious! Thanks for sharing. We Southern gals love a good recipie like we love sweet tea with lots of ice & fresh lemon! Bless you & the house tours are great if you can get past the landscaping...the grounds are drop-dead gorgeous & for me there just are no words! You have rendered me speechless...

Paula Dean, you make it look so easy. I just made this but my grease was to hot and I burned 2 pork chops. I managed to save 2 with new grease. Thank goodness it was just my husband and myself and we enjoyed them very much. Thanks your so much fun to watch.

I love eating at the Island. All the food is so delcious!! My problem is u get so full when the desert is brought out U have no room to eat it. They want let u carry out ur leftovers and I think they should. I would have loved to have tasted the banana pudding and the chewy cake squares. You remind me of my mother. She was from Missouri. Dad was a Kentucky man.We ate fried Rabbit, Squirells and our farm raised Beef, Bison, chickens and Pigs. Only country folks eat farm fresh meats. Keep up the great video's Paula.
