I baked this today - I omitted the jalapeños and green onions, but I did add some creamed corn, which added a bit of moisture and sweetness. Enjoyed a sample slice with salted butter - such a moist and tasty cornbread, the flavor/add-in possibilities are endless. I may whip up some honey butter to go with it. Thanks Charlie! I just made them and had some still warm out of the oven. Lots of butter👍. The flavour is incredible. I used cream corn, that’s what I had. The pickled jalapeños are just perfect. Cheers for the keeper of a recipe 🤙🇨🇦.
This looks delicious! To get a gently fried crust I preheat a cast iron skillet at the same time as the oven. Add butter and brown it. Add batter and bake it.
Made this recipe and forgot to add the honey but it came Out downright delicious. Very good presentation and timings and temperatures were the same in my little oven.
We have almost the same in the Balkans/Serbia, and we call it "proja". Basically, the dry ingredients comprise the base, and then you can add whatever additions you want. We usually use young/soft white cheese and/or pork cracklings. Combined with ajvar it's The Stuff.
Cornbread is a perfect complement to a big bowl of chili - great for the cold weather. Thanks for sharing this recipe, Charlie - it sounds quite tasty!
Made this yesterday and it’s delicious. It’s summer in Australia and too hot to turn on the oven, so baked it in my Phillips air fryer. My 20cm (8 inch) spring form cake tin fits in the air fryer. Lined it with baking paper before pouring in the mix. Covered with foil and poked a few holes to release the steam. Cooked at 180 deg C (350 deg F) for 20 min. Removed the foil and cooked a further 15 min. Came out a bit darker than ‘golden’ so will reduce to 10 min uncovered next time. Otherwise, it turned out as light as a cake. I used fine polenta for the cornmeal component. Will definitely make this again.
Being from Texas jalapeno cornbread is something I make fairly often. I definitely like it with corn and jalapenos. I don't like it sweet so no honey for me. Great job!
Thank you for all your videos. They are very inspiring and confidence building. On 1/26/25 my starter will be 2 weeks old. I started with a dried starter. I am a micro bakery and could not bear to throw out the discard. I now have 7.468 kilo's of starter ( yes, you read that right). I fed it earlier today and hope to make pizza dough and focaccia later today. I am sure I will be getting the memo about the reality check on what I am trying to do here in a couple hours. Until then, onward! And thanks again for your video's.
Your cornbread looks fantastic! When I was a child, a restaurant in Tucson had Mexican Cornbread that was very similar to this. The one difference that tasted really good and also made a really pretty presentation was the addition of either diced pimentos or diced red bell pepper. It's been so many years, I can't remember exactly which it would have been. I suppose either of these two would be really good. Thanks for the video! One day I will give your recipe a try. I am a southern guy and I grew up eating cornbread on a regular basis. My mom use to make it almost daily. I make it occasionally too. Although she is not with us any more I still use her recipe. It has fewer ingredients, and can be customized in any fashion I decide. My favorite is Black pepper/Cheddar cornbread. Sometimes I want nothing but milk and bread. So I crumble it in a bowl and pour milk over it. That is a meal all by itself. You can even break up some crispy beef bacon and you’d have a tastier meal. Thanks for sharing.
My FIL loved cornbread and milk. Drove my MIL up the wall because she thought it was uncouth. So whenever they were over and I was serving cornbread, I always made sure I put an extra glass next to him with a cream pitcher of milk.
I make the no-knead dutch oven bread and add shredded cheddar cheese and chopped pickled jalapeños and one tablespoon of the pickle juice and one teaspoon of sugar. Best and easiest bread recipe. No eggs, butter or milk.

Alternatives include scalding the cornmeal before adding the other ingredients. Another variation is mix a can of cream style corn, a can of chili beans with the dry ingredients. Cornbread was the only food unavailable to a lot of poor families in the southern United States of America.

Oh, and didn’t have butter milk so used a 50/50 mix of sour cream and full cream milk, as suggested.

Could you use a portion of the flour to ale a yudame to make it more moist and lighter?
I'm not sure if that would help in a recipe like this one. It may become heavier. The bread is already moist and light as it is.
I like how you added whole wheat. Would frozen sweet corn work as well as the canned?

My cornbread is in the oven. I had emmental. I used it instead. I didn't have jalapeño. I added 10g of gochujang. 10 more minutes in the oven...
We don't do honey or sugar for the cornbread where I'm from, lard and cornmeal is what is important.
