I have been pressuring canning with.my mother since the 1960's. I am the eldest of 10. We never soaked beans before canning. We pressure canned for 75 min 10 pounds pressure. We canned red beans, black beans, pinto and used white beans when we canned soups. The only time we soaked the beans and parboiled them was when we were making for example chili beans for dinner. We would parboil to remove any gases that floated to the top rinse them and then proceeded to cook them. Sharing is caring. p.s. my mom is still alive and well 😅
I've always been scared of a pressure cooker, but I've also been curious when I see the vintage ones in the antique malls. This video is well done and I feel 84% closer to getting one. I heard you mention Lima beans-my favorite and I'm curious if I could put potatoes in there. Thank you!
Thanks so much. I had bought a stove top Presto then I saw this digital one and had to have it. I use lots of beans so this video is perfect. I can't wait, it should be here in a few days. Thank you.
Mark I did fall in love the first time. I became a canning fool. :) I just shared this video to a friend she wanted to know how to bypass the heating jars I want to do it all the time now. @@markellyfarm
Thank you so so much for this video. I want to pressure canning and your video convinced me that a digital pressure canner is the way that I should go.
Thank you! You have sold me also on getting this 'new fangled' pressure canner.... I have only water bath canned cherries, several years ago, then gave my WB canner and supplies/jars away. Now, with the state of affairs our world is in, I have been buying canning jars/supplies the last few months. Your videos are appreciated 👍 Thank you!
Thank you for your video in the digital canner. I finally understood what to do. Still learning. I made the best baked beans so easy! I'll never buy beans at the store again!
I agree with you that this pressure canner is absolutely amazing! I simply can’t wait to get one. I appreciate you so much showing us on your canning journey. Thank you so much! ⭐️ ⭐️⭐️⭐️⭐️⭐️⭐️⭐️⭐️⭐️⭐️⭐️⭐️ Great video BTW
I can more often than I ever did before. Small batches are the only downside, but if you can more often, then I guess those small batches add up. I almost want to buy another one.
Just looking a your video. I recently bought this canner I love it. ON THE BEANS some info I fill my jars like you do but I leave them over night so they swell up and soften. that way the heat can penetrate the bean and it is safer that way. Also I know if I have too many beans in the jar.
I love this canner and use it regularly. The reason to not can the beans unsoaked is because the heat cannot penetrate the center of the beans properly as it can when they are soaked.its easy to soak beans overnight, bring to a simmer for 30 mins then can them.
@markellyfarm I did with the black beans before I found out why it's important to soak them first. It's OK, I'm just all about safety. I know alot of people can then dry in water.
@MsKatherineJo 1/2 cup soaked beans, yes cause they will continue to expand during the Canning process and will absorb the water so be sure the water level is correct.
I just received my canner. Thank you for your instructions. The Manuel, while good, doesn’t tell me as much as I’m learning here. Not as clearly. Thank you.
Just ran across your video. Very informative, but I do have a question about the size of your Presto canner. I am looking to add another canner for my canning needs and need one that is able to do pints and quarts. Thank you for your information.
It pressure cans quarts as well. Does 5 at a time. A little less than the old canners that did 7, but being able to walk away negates that, in my opinion. The only limitation is that this unit can't waterbath quarts as the water isn't deep enough. I absolutely love it. It's a real game changer!
Yes you can do 5 qts in this canner however I would soak them for quarts. Put 1 cup of dry beans in the jar and fill with water. Let them sit overnight.Add 1 tsp of salt and can them. Pressure can 90 min.
@@OneBrightLightTN wayfair had them for $225.00 and we bought two. Now that they are out of stock they increased their price to like $350.00 which is what amazon was selling them for. There are some listed for like $700.00 by people taking advantage of the shortage.
@@OneBrightLightTNI know this was a year ago, but Farm & Fleet and Amazon are $329.99-they both run sales and then are about $287.00 or a bit better. Just seen Wayfair at $260.10.
Its not recommended for everything. Raw materials are ok to cold pack but anything prepared like soup needs to be hot pack. Now with that being said, you can actually add the ingredients and cook it in the jar like we did with the beef stew. You do want to avoid thickeners.
THANK YOU!!I have the exact canner and found instructions confusing..do I have to cool water down to run a 2nd batch of food to can. Or can I put it right in the canner.
Question for anyone. Never canned but hope to this year to preserve some of my garden. If you do dry beans the way you did they are cooked and ready to eat when your done right? In the future you'd just have to open and heat?
Don’t forget to add the 2 Tbsp. Of white vinegar in with the three quarts of water. I love my 12 Qt. Presto Precise Digital Pressure Canner. I got it in December and have canned something almost every day!
I just got this canner. There is now an orange warning notice saying do NOT add vinegar or cream of tarter to this canner. It damages it. Unfortunately, the directions included this step.
I’m just curious about how much water you put in your canner. Mine does not fill up to just below the ring, as yours did. I’m wondering if it’s just the size of the canner. My canner called for 8 cups. It’s large. 9.5
Did you add salt? I didn’t see where you did? I canned my first time in my canner did pinto beans with no salt just tap and a tsp or so of onion powder.
As long as you let the pressure fall on its own, the water shouldn't be too hot for the jars, especially if you are adding more water to top it up. If you are worried about it being too hot, just change out the water or just run your jars under some hot tap water briefly before putting them in.
I just got the pressure canner. It’s my first time pressure canning, I’ve done water bath previous with the non electric version. But my air vent won’t rise. Does it take a long time to rise on the electric canner? It won’t get past the CAN phase.
It takes a bit. Check for steam venting around the lid. If so, make sure your seal is in correctly. The only other reason would be if you didnt put your vent in can mode. Run it without any jars to cycle it.
Yup. Half teaspoon for pint. Whole teaspoon for quart. If you do quarts i would recommend that you fill the jars the night before and let the beans swell.
I'll bet from frozen would come out just right. If heat builds up fast then you set... I think it's only 10 or so min for shrimp. I retort can too so I could probably use bags and fit more in. I'll have to ask my retort canning people. I'm sure someone has tried. I retorted shrimp once and the pressure turned them to mush ... it was a long process waiting over an hour just to get to temperature ... so a lot of cooking time.
Ours turned out great. Hope you figure out the issue. Your beans need to be nice and firm when you start. They will not be crunchy by any means but definitely not mush.
Do you double stack the pint jars or just a single level? If you double stack the jars, do you place a rack in between like you would for a stove top canner?

Aren't they cool?
Yup the vinegar keeps the hard water from chalking up the jars.
Why the vinegar?
White vinegar will damage the seal eventually. One teaspoon of Cream of Tartar is much kinder to the seal and the canner.
I just got this canner. There is now an orange warning notice saying do NOT add vinegar or cream of tarter to this canner. It damages it. Unfortunately, the directions included this step.

For steam canning, there is a line in the pot that I fill to before adding jars. For the waterbath, i just go an inch over.
Hydrated beans before cooking to avoid "gas and discomfort "

Can you add spices to your beans? First time using my electric canner.
Absolutely. I leave them with just salt so I can go any direction with them.
Did you add salt? I didn’t see where you did? I canned my first time in my canner did pinto beans with no salt just tap and a tsp or so of onion powder.
I didn't. Just canned some more and used some chicken bullion powder. 1 tsp per pint.
Was wondering if you would share the name and source of the brown beans you mention in this video?
I got them from the previous owner of the property. He called them sweedish brown beans.
Thanks for sharing. Could you go ahead and add seasoning when filling your jars?
Yes, absolutely. Im actually canning more beans today and I'm going to add some powdered chicken base.

I'd like to do chicken and then shrimp in pints. How does it do? mushy shrimp?
I dont know how shrimp would come out. I dont like them overcooked. Might be ok. I would love to live in an area where there was enough shrimp to can!

Can you can quarts in the machine?
5 qt jars. Pressure can only for quarts. Not deep enough for waterbathing quarts.
Where do you find those Swedish brown beans at a reasonable price?
We actually grew them here on the homestead. The previous owner gave us some dry beans to plant.
Can you can quart jars? If so how many fit?
Yup, pressure only. Fits 5.

Do you do garbanzo beans the same way?
Never tried. Sorry
👍🏻😊
Where did you buy your electric pressure canner?
Kelly bought them both on Wayfair. I've heard Farm and Fleet have them again too.
How much does it raise your electric bill?
Unnoticeable
Do you soak your beans first?
Nope.
Do your vegetables turn out mushy? I did a batch of green beans and they are so mushy they aren't eatable.
Ours turned out great. Hope you figure out the issue. Your beans need to be nice and firm when you start. They will not be crunchy by any means but definitely not mush.
Did you add boiling water to the canner or just tepid tap water?
I just add our crazy hot tap water.
This canner lasted one season. I loved it too but it wasn’t worth the price.
Did it break? Ours is still going strong.
Do you double stack the pint jars or just a single level? If you double stack the jars, do you place a rack in between like you would for a stove top canner?
It's not tall enough to double stack pints. A rack is always recommended if you stack.
I didn't mean to give a thumbs down on this question. My finger hit the button by accident.
No worries!
