- The Presto Digital Canner is advertised as safe for pressure canning. Using my data logger to test raw pack chicken will determine whether the meat inside the jars actually reaches the botulism kill zone temperatures for a long enough duration to truly meet the USDA safety standards.

That data logger is the coolest gadget ever!
I bought one of these pressure canners earlier this year. I love it. I started with some thing simple like carrots. I've canned potatoes, sweet potatoes, chicken and mixed vegetables in broth, pot roast, chili, BBQ pulled pork and so much other stuff. I live alone and do mostly small batches of pints. I've sampled several things and it's all been really good so far. Today I did 5 quarts of chicken, tomorrow I'll make sloppy joes and bean with ham soup. This is my new favorite toy!
I have seen people recommend really large pressure canners but I also live by myself and wonder if I need something that big. Are you happy with the size? Do you wish it was bigger or will you buy a second one?
@@tripudium17 I've been able to can just one or two jars if needed. If I find a good deal on something then I can can it and not have to worry about buying more for a whole. My freezer was getting full and I'm trying to can what is in it before it might get freezer burn. I've made meals in a jar for days when I don't feel like cooking...just heat it up. I canned some chicken and andouille sausage gumbo...no roux. When I'm ready to eat it I'll make rhe roux, add the contents if the jar and while it simmers I can cook rhe rice. The canner also does water bath canning so it eliminates the need for two canners.
I have the same canner, you can skip the warm jar step by just advancing to the next step. I love this canner. It's so easy to use.
Even though I have watched so many of your videos, I always go back to rewatch when I'm processing the items you are processing. Love that "school" like presentation. I have learned so much more, thank you.

Although that first step does seem like a waste, especially if your doing a cold food/cold jars I am still leaning to this over the Max for the fact it can do quarts. And I dont care how many times I see that logger..its still sexy. You have no clue how appreciated you are. Applause
LOL! I think the warming phase also helps raise the temp up so it can more easily get to the kill zone during the canning phase. Just my thoughts!

We just built a house and I have a glass stove top, so I’m afraid to can meat with my All American canner on my stove top. I just purchased this canner yesterday and I’m excited for it to arrive. I think this is remarkable and is going to be a great help to people like me in wheelchairs or who have damaged hands and cannot carry pots of boiling water or even deal with a lot of boiling water on the stove. This is easy enough for me to teach my caregiver how to do this and then we can just put the food in and pretty much walk away. I'm so happy this has come out and I'm sure that other companies will be soon to follow!

thank you so much for all of your testing and for sharing this information with all of us. You have made the canning process more "comfortable" for those of us that are not sure if it works. Since I've been watching your videos, I cannot believe how much I have canned. What is truly amazing is - our refrigerator/freezer went out last week. I was able to can 32 pint jars of chicken, ground beef, and chuck roast so as not to lose it. We also canned several jars of frozen fruits (for smoothies), and vegetables we use for stews. Before "Rose Red Homestead" - I would have been totally panicked. We now have everything fixed without stressing or crying (I'm sure my husband would have been upset and stressed also).

August 2022. I have this canner, bought in May. Now the regulator is in the front of the canner when the lid is locked on, making it easier to put on at the proper time. I have enjoyed using my Presto Digital canner.
I love that you're doing all this research and proof that the presto electric canner safely cans. I started canning about 6 months ago with the presto electric canner, And I love it! I have an old style glass top range and I'm unable to use a range-heated canner. I'm so grateful this presto is electric and I can use it very easily in my kitchen. The only thing I wish it was also offered in a bigger size. It's a great size for small batches, and for my husband and me, however I like to can for my children and grandchildren and find it would be more time effective if I could get one that was larger as well. Until then I may get a second one just so I can do two batches at once. 👍🥰. For anyone considering the presto electric canner I would highly recommend it!!

Thank you so much, Pam, for doing these videos. Your video summarizing the temperature data for your various batches convinced me to purchase the Presto Digital Canner. Personally, I suspect Presto designed the canner to stay in the kill zone for a longer time than necessary to avoid lawsuits.
I haven't read all the comments and don't know if anyone else mentioned that Presto has revised the manual to provide updated information on the use of extension cords as well as how to by-pass the Jar Warming phase. My unit came with a pink sheet with the updated/supplemental info for my manual (revision B). Presto has the revised manual on-line, currently at revision C. The use of an extension cord is on page 2 and instructions for by-passing the Jar Warming phase is on page 23. It's probably in our best interest to periodically check to see if there's a new revision for the manual.
I look forward to watching more of your pressure canning videos, especially those using the Presto Digital Pressure Canner.
Thanks for the information. I have tried to bypass the warming cycle per instructions from viewers, but I can't make it work on mine. I will download the new manual and read the instructions to see if I am doing something wrong. It might be that the older ones don't do that, although I have only had mine for a couple of months.

I purchased my Presto canner in October 2022. I can chili and soup for my daughter in another state. Any left-over chili and soup is placed in the jars and canned as I clean the kitchen after supper. I have recommended this canner to young people who want to being canning but are afraid of the pressure canner. I have also recommended people watch this video to see how you operate the canner. I love that you are giving the science behind the chance of botulism…I have only read about that but never heard anyone actually speak about it. So many uninformed canners don’t believe that there is such a thing as botulism food poisoning…and there definitely is.

I am developing my canning skills and I find your videos so very helpful. It is possible to skip the warming step, if you choose. When starting the warming cycle, press and hold the arrow button for about 5 seconds and it will skip the warming cycle. Occasionally I will cold pack something and don’t need to warm the jars. Generally though I find the warming cycle very convenient.
There is raw pack and hot pack, but I am not familiar with cold pack. Even with raw pack veggies you fill the jars with boiling water. With raw pack chicken and beef you don't add any liquid. If the water in your canner is hot, you don't want to place a cold jar of food in because the temperature differential could break the jar. I sometimes do want to skip the warming cycle when my jars are already warm so I will try your tip next time! Thanks.
After seeing all this valuable data you have collected, I almost feel comfortable using one of these. Almost! Thanks again for sharing your test data and for all your hard work.
If a regular pressure canner scare you, these electric ones are much easier. I don’t have one but I have 3 older pressure canners. I’m sure you can do it!! Have fun. I play music and dance when I’m canning. Find your comfort spot and go for it ! You got this!!
@@DoubleDHomestead I am not scared of anything,, a regular pressure canner with a weight and a gauge have used all my life.(I trust the food safety of those) I am just still not comfortable with the food safety on these electric canners because we have no control of the pressure and must rely on electronic sensors that presto and insta pot buy from the lowest bidder.

Misunderstood the comment, I was scared of pressure canners because when I was little , I saw a pressure cooker blow up on my mom so I had a fear for decades of any pressure cooker/canner, got my guts up and did it. Yeah, I’m using my old tried and true canners now. I’m sticking with them. Apologies, didn’t mean to presume, just took the comment wrong. Happy canning.

You could be heating the water separately from
Heating the jars then your just topping out hot water into your kettle or sink full the jars and start.
I use a short heavy duty extension cord with my presto as the manual says and it works fine love your videos

A question... so many cameras can soups with bits of added meat for timings usually used with canning meats alone, yet USDA guidelines state 65 min for pints and 75 min for quarts, as opposed to 75 and 90 mins, respectively. Why the shortened timings for soups with meat? 🍖🤩

Loving all of you and your husband's videos, just an FYI , during your (canning raw packed chicken video) you handled raw chicken then went into drawer got blue marker put an X on the top of jar then opened drawer put marker back then closed drawer, paving way for illness. I know you are a very contentious person and wouldn't normally let this by you, filming is anything but normal, maybe gloves when canning meats might be a good topic,,, can't wait for your next video!

I just got mine last week and they now include instructions on how to skip the warm cycle. When you push up to the "warm" cycle hold the arrow button for 5 seconds and it will skip to "heat"

I appreciate your commitment to safety. Some of the canning videos I can tell by the title that what they are attempting to do is not safe.
I grew up canning with my mom and I have been canning on my own, off and on, for the 50 years we have been been married. I would rather do the extra steps and be safe that look for a shortcut.
I want to tell you how much I've enjoyed this video. And all the videos you've done on the Presto Canner. The fact that you're using professional, facts based information and data to determine your outcome is what is needed here. And that's one of the reasons i watch your content, over any other Pepper here on RUclips. Now, having said this. I've noticed that you've been showing some hesitation and reserve regarding the Presto Canner. And calling into question if it works correctly. Frankly, i'm not sure why, and am a bit puzzled. You enjoy using the Instant Pot Max enough. Presto has been making quality appliances and canning equipment for decades. They're definitely a company with a wonderful history and a good track record. This canner is different from the traditional stove top canners of course. And uses an "all sea-level" system to do the canning. As both of your tests and experiments have shown. That this canner operates as it should. In fact, i was so impressed with your results. I went online, and I'm going to order it at the end of this month. It's exactly what a single canner like myself needs. No fuss or muss, and an easy-to-understand operation. In conclusion, keep the great videos coming. And I hope that you're going to get over your hesitation and reluctance about the Presto Canner. All the best to you and your husband.
Thanks for your comments. I agree that the Presto Digital is good equipment and does a safe job of canning judging by my data at my elevation. My only reservation is that it stays at kill zone temperatures far longer than necessary and therefore keeps the food at that high temperature longer, which impacts the food value somewhat. It is for that reason and for the fact that the Max has an external temperature readout that I can monitor that I do lean more toward the Max. For me, the only advantage of the Presto is that it does more pints than the Max. For quarts, I would opt to use my traditional Presto 23 qt canner because it does not have that same extended kill zone time.
You can bypass, it says how to skip forward under the instructions for error during canning. I did that and it worked fine. Love your video! Thank you

works great. i love that it has stainless steal pot inside ruclips.net/user/postUgkxG-7WiT7ocumjytOpHDFt632PL0pxXRAg and not the one with coating. we used to have a coated pot before, and the coating slowly peels, and i am sure went into the food that we cooked. Absolutely love stainless steel, and will not use a coated product again.This pot has many settings and many buttons, and i need to sit down with a manual to figure out which setting to use. I used the basic functions, and even though i am not technologically skilled, i turned it on and assembled it without any help.Very satisfied with this product overall.
After watching your testing, I bought one of these. I have my second batch of strawberry jam in. It’s that time of year, here in Northern Michigan. I have 3 quarts of berries left to slice and put in the freeze dryer.
