Cream of Turkey Soup - Bonita's Kitchen

  • Welcome to Bonita's Kitchen! Today we will be making Cream of Turkey Soup, made with leftover roasted turkey and root veggies. See recipe below!
    Ingredients:
    2 Cups cooked turkey, chopped “ more if needed”
    4 Cups veggie broth or hot water
    ½ Tsp black or white pepper
    1 Tsp Sea salt
    ½ Tsp savoury
    1 Cup evaporated milk, or milk of choice
    2 Medium onion chopped
    3 Medium chopped potatoes
    2 Medium carrots, chopped
    1 small parsnips, chopped
    ½ small turnip/rutabaga, chopped
    ½ Cup frozen green peas
    1 Tbsp olive oil
    2 or 3 Sticks celery, chopped
    2 Tbsp butter or margarine
    1 Stick green onions, chopped
    3 Tbsp flour
    Sauté chopped onions in butter and oil until tender and transparent but not golden brown, add flour cook for a minute then add one cup evaporated milk and one cup veggie broth stir until thicken. Keep on simmer until ready to use.
    In a large boiler with lid, turn burner on a medium heat add three cups of veggie broth or hot water, let start to boil.
    Peel and chop potatoes, carrots, parsnip, turnip/rutabaga and celery put in a bowl of cold water until ready to use, when broth is boiled and ready, drain water off veggies and add to boiler with sea salt, pepper and boil 5 minutes. After add cooked chopped turkey, cook for 5 to 10 minutes, then add your sautéed onions and mixture then boil for 5 minutes.
    When soup starts to boil again, add 1 tbsp butter, chopped green onion and frozen green peas, stir in and simmer until ready to serve.
    Keep on low heat to stay warm, at this point you can taste to see if you need to add any more seasoning.
    Serve with fresh bread, rolls or potato biscuits.
    Bonita’s Tips:
    Frying onions before helps to add more flavour and your are sure the onions are cooked.
    Peeling and soaking veggies before and letting it sit for a while removes starch from potatoes and cleans veggies good.

    Bonita just made this cream of turkey soup. Unbelievable. Out of the park. the whole family went nuts for it.i do all the cooking here at home.i love it.i,ve been looking your recipes up and tried a lot of your stuff.Im in cape Breton and love the recipes.also made your white bread to have with.omg...thankyou.keep them coming.

    Oh no, I'm number 13 to like!!! Hope that's not an omen of things to come ! Well, that's 2020 for ya!
    My family loves this recipe. Sometimes I make it really thick and serve it over rice or mashed potatoes! (Depends on what kind of vegetables I use.) But I always top it off with a sprinkling of fresh ground nutmeg!! Yum!

    So glad I checked your website for a turkey soup recipe. I made this from my leftover Christmas turkey. I even found turnip and parsnip in my Central Florida supermarket. Absolutely delicious!! The creamy base kicks it up a notch. And you are right about including onions to enhance the flavour. Happy New Year 2022 to you and Raymond.

    I’ve always used evaporated for my chowders, my Dad called it cream, and would use it for his tea. It must be a Canadian thing. Happy New Year to you Ms. Bonita. Thank you got your recipes.

      Hi Gaye: Thank you for sharing that with us, evaporated milk was use more often years ago, but I still love to use it in my recipes and sometimes in my coffee, I drink my tea black.     Aaaah the great debate :) Turkey Noodle Soup vs. Cream Turkey Soup is a real problem in our house(usually), the four of us are divided on this 2-2 ....lol Being the cook of the house I try to switch it back and forth to be fair and also have come up with an add to the cream soup to make everyone happy. Two of my daughters who prefer the noodle soup but my third is with me that cream is better (more stew like) so to make them happy I started to add brussel sprouts to the cream soup because they are a loved vegetable in our home. Now all that said no "fight" this Christmas as I was out voted and we didnt even have TURKEY (lil heathens) ......lol They decided that Christmas dinner would be brussel sprouts, garlic bread & lasagna ......lmfao My girls own my heart so couldnt say no to their unanimous decision

      I think that sounds like a lovely Christmas Day dinner, if everyone was happy with the meal thats all that matters. Whats so lovely about this soup if you bought a turkey leg or breast and cooked it in the broth and then chopped it in small pieces, then continued on with my recipe it would taste amazing. We love buying the turkey parts for soups, have a Happy New Year and stay safe. :) Bonita

      Hi and thank you for your message and for stopping by, I'm not a dietitian so I can't give you the nutritional value but it is a very low in fat and lots of tasty veggies so all of that is most diffently good for you. I hope this helps and thank you for making our soup recipe. :) Bonita

    Bonita, I don't care for a white cream sauce, I just don't like the look of the whiteness of the broth. What do you think about tomato paste instead of milk?
