Epic Caramel Cornflake Brownie Cake Layer Cake! | Full recipe and decorating tutorial

- If you've been following us for a little while, you'll remember when we first put the Caramel Cornflake Brownie on the counter, after the awesome guys at Sorted Food featured it on a video, it became an Internet sensation, since then it's been one our best selling products in our Soho bakery to date. It's available on our counter 7 days a week. We decided to rebirth it into a layer cake recipe.

CARAMEL CORNFLAKES
150g Double Cream
1⁄2 tsp Vanilla Extract
1⁄4 tsp Sea Salt
225g Caster Sugar
75g Butter, Cold and Chopped
95g Plain Cornflakes
SPONGE
650g Plain Flour
690g Caster Sugar
120g Cocoa Powder
2 tsp Bicarb
1 tsp Sea Salt
450g Coffee, Cooled
450g Buttermilk
390g Vegetable Oil
6 Eggs
4x 8” Round Cake Tins
SALTED CARAMEL
350g Double Cream
1 tsp Vanilla Extract
1 tsp Sea Salt
350g Caster Sugar
150g Water
BUTTERCREAM
400g Unsalted Butter
640g Icing Sugar
Half of the Salted Caramel
MALTY CORNFLAKES
15g Malted Milk Powder, such as Horlicks
15g Caster Sugar Pinch of Sea Salt
40g Melted Butter
60g Cornflakes

Why make a dry caramel for the cornflake mix but a wet caramel for the other? Thankyou :)
Hi Jemma, I'm your fan from Malaysia, when we put the cake in the fridge to set the crumb coat, is it ok to leave the buttercream outside, Malaysia is hot and humid, will the buttercream 'melt'?

Just a heads up for the ones that are making this, the description says 1 tsp baking soda, and the video says 2, its 2, made it with one, and came out flat and dense, 😢, even though I've made this chocolate cake a million times, i didn't recall the right amount 😭😭
is it fine to be leaving the buttercream (for the topcoat) out while waiting for the cake to be chilled in the fridge?
Absolutely, just keep it covered with cling film, or an airtight container to prevent a crust from forming ❤
My husband stopped eating cake and biscuits so not sure when I will make this. Although my sons turn 18 and 21 July for my 17 year old September for my 20 year old maybe birthday cakes

Ooh whats the difference between wet Vs dry caramel? ❤
A wet caramel begins with water & sugar then as it turns amber you add the cream. A dry caramel is just sugar in the pan, then add cream and heat to a specific temperature 👌🏼 they’re both used for different things, so a wet caramel is a good sauce, whereas dry would be good for layering in brownies/bars as it sets firm

This is going to be my Christmas cake!!
Well Jemma I have began to make this ……. I have made all the components with the exception of mixing the chocolate with buttercream for the “Blobs”. I ran out of time so I wrapped up everything to decorate tomorrow & very nervous about this step 😬 The caramel cornflake balls are very soft and falling apart a bit for some reason, I feel like I done everything correctly. I didn’t find making any of the components difficult, just time consuming with kids under foot and cooking dinner in between. Mum life 😁. Should I post a picture? here or I.G. ?

Do you warm your cream? My caramel has always seized after adding the cream, and I read this can help.
We don’t warm the cream, we usually have it out of the fridge for a little bit before using, but the trick is to stir vigorously while adding the cream, keep it on the heat and keep stirring to remove any lumps x

Would it work to use coconut cream in the caramel instead of dairy cream?
We actually haven’t tested these recipes with coconut cream to say absolutely if it would work, but it’s definitely worth giving it a go!
