    Singapore is food paradise. Lived there for 2O years and there were always new gems to discover in Hawker centres, Food courts and local neighbourhood restaurants.

    It amazes me how quick things are cooked in a Wok. Also how practical the workstation is. Everything is right there. Even dumping the water used to clean it is right onto the work surface where it drains.

      Well, when you have a gas burner underneath the wok so big it looks like the afterburner on a SR-71 going off, it doesn't take long at all to cook food.
      Just a very intimate knowledge of how long everything takes to cook. 30 seconds either way can make or break how it turns out.

      That's salt & sugar. Nowadays, most restaurants doesn't use MSG. Besides, msg cost $$$$.

    That was very impressive. Cooking in a wok seems to require a control over the fire and the heat which eludes me. That pan goes through a multitude of states and changes for each dish. Incredible.

    You really don't know how hot it is working in a kitchen, until you've stood in a line during dinner service. That Chinese kitchen is extra dangerous and hot. The roar of that huge gas flame is a lot louder than you can ever imagine.

    This is Singapore, not Hong Kong. When the Michelin tasters from HK came here and started to award Michelin stars, their choices reflected their bias towards Cantonese food like soy sauce chicken. Many HK chefs who do not want to flee to a western destination choose to settle in Singapore.
