Chicken Enchiladas | Hatch Chile Sour Cream Sauce

Sauce:
- Three (3) tbsp unsalted butter
- Three (3) tbsp of flour
- Two (2) cups chicken broth
- 1/4 oz can of diced green chiles (mild)
- One (1) cup sour cream
- One (1) tsp salt
- One (1) tsp pepper
Enchilada:
- Eight (8) to ten (10) flour tortillas
- Three (3) cups of shredded chicken
- Three (3) cups of shredded Monterey Cheese
- 1/3 cup sauce (see above)
- 1/2 tsp salt
- One (1) tsp pepper
- One (1) tsp cumin
- Three (3) tbsp sliced green onions to garnish
