I watched your re-assembly of the engine a week or so back but not your teardown. Nothing like watching something out of order. I do have a question. You removed the timing chain sprocket but what is that inner sprocket for?
using your torque qrench for undoing the botls is not the best idea. you will destroy the calibration on the wrench this way. get a proper breaking bar.
This has to be the most complex engine I have ever seen. Kudos on your work!

that center exhaust valve looks almost white, look for signs of the stem stretching, it may not be seating and running hot

That is the flange sprocket and it fits over the camshaft woodruff key and accepts the dowel pin from the timing chain sprocket.
