How To Make Salted Caramel Ice Cream
2 tbsp cold water
1 cup sugar
2 cups thickened cream
2 cups full cream milk
1/2 tsp sea salt flakes
1/4 cup golden syrup Хобби

If you let your cream warm up a bit your caramel won’t seize up and will incorporate in your cream mixture

You lost a lot of flavour in the ice cream by not cooking that toffee down into the base and instead using it as a garnish over the top. You easily could have made a toffee separately for that. The end product looked like it needed to churn in the ice cream machine for far too long, the ice crystals are visibly large which would lead to a gritty mouth feel. You should have thickened the base with either corn starch or by using egg yolks as a thickening agent to help avoid that.
