  • Balti Curry. Spicy, Aromatic, Spicy. Famous all over the UK in BIR restaurants for its intense fragrant flavours. Said to of Originated in the Balti Triangle, Birmingham, it has now found it's way to Al's Kitchen.

    Butter Ghee or Oil
    2 Green finger chillies (chopped)
    1 Tbsp Garlic Ginger Paste
    Slice of fresh Tomato
    Few slices of Green Bell Pepper
    6-8 pieces of Chicken Tikka ( • How To Make CHICKEN TI... )
    1 Tsp Chilli Powder
    1 Tsp Tandoori Masala Powder
    1/3 Tsp Garam Masala
    1 Tsp Fenugreek (Methi)

    Pinch of salt or to taste
    Fresh Coriander to dress

    I've been absolutely loving the videos! Fantastic stuff!
    I'm not sure if you take/consider requests for videos, but if you do, may I suggest a 'Curry Kitchen' video or a 'how to set up shop' video. Something to go over all the suggested ingredients/spices, pre-cooked prep work (base gravy, garlic/ginger paste, pre-cooked protein etc) tools of the trade (i.e. I notice you use an aluminum pan and wondered if that's specific to the style of cooking or just happens to be what you have) that someone should have hand. You could include any tips and tricks you've learned along the way for a nice set up kitchen!

    Another mouth watering dish... so tasty yet so easy to make with that base gravy. I shall probably have to have this one on Easter Monday. Well done Al...keep posting these recipes.

    Al, another great video!! I believe a lot of BIR used pataks balti paste in their Baltis but the famous enough Birmingham balti doesn't. What is your view on using this paste. I have used it but the dish ends up tasting sour due to the amount of lactic acid in the paste.

      On this particular video it was literally the mic on the camcorder. Nothing special. I always think the quality is pants lol

      I have literally read every Indian food cook book in the library since I can remember. I have been an active member of several BIR forums, but since I discovered Al`s kitchen there`s been no looking back. Your videos are outstanding and easy to follow, and the results speak for themselves. Anyone who is thinking of cooking BIR style curry at home should first pay a visit to Al`s kitchen.     hi al I'm doing this curry tonight for me and my wife what spices do I need and how much spices do I need for this curry for two people.

      Hi Ben. The full list of ingredients are listed in the description detailing what spices you need. Do two separate portions which can be done in less that 10 mins once you've prepped everything. I also do a Jalfrezi Balti which I highly recommend.

      Hi.. It's a wok stand. it was with the cooker when i bought it. I think you can buy them in kitchen stores.

    Have you got a special cooker there with a high heat hob?

      Wouldn't say it was special but the centre ring is a higher output. The iron ring sits on top for wok cooking but I place the Balti bowl in the centre to keep it steady.

      Exactly. Al's recipes are superb, but I cook this is in a far larger pan and then transfer it to the type of container he is using here..
