Chicken Bhuna in 30 Minutes
1 kg chicken thighs
150ml oil
600g onions, boiled for 10 mins, drained (save 500ml onion water) and blend.
3 medium onions (300g)to be quartered and charred.
1/2 Green and Red pepper chopped and charred along with onions.
Small piece cinnamon
6 split cardamom pods
3 tbsp garlic paste (or garlic/Ginger if preferred)
2.5 tbsp mix powder/bassar/mild madras curry powder
2 tsp garam masala
1/2 tbsp Tandoori masala powder
1 tsp salt to taste
1.5 tsp sugar
1 tsp chilli powder
1/2 tsp deggi mirch ((optional)
1 tsp kasoori Methi
5 tbsp tomato purée
1 Fresh tomato (quartered)
1 Tbsp butter ghee at the end (Optional)
500ml boiling water (use water from onions)

Gorgeous curry, I added my Cardamon pods and Cinnamon stick to the Onion water and boiled them with the onions, bit like a Akhni stock. Much easier to discard them as wife and kids hate finding these in there currys 😝
Made it tonight. Best bhuna I've ever tasted. And plenty for tea tomorrow. Who needs a Sunday roast when you can have a bhuna?

I’ve cooked this recipe a couple of times for my wife and I and love the end result. I have decided that this will be the recipe I will use on New Year’s Eve when friends visit but thought I’d try it out on my daughter (now living in Sheffield) who is a big curry fan. She couldn’t believe I had made it and said it was probably the best curry she had eaten in years.
All credit to Al, I followed his recipe as printed, apart from adding the sugar.
Tried to keep up with you from 5pm but I hadn’t charred the veg. Now waiting for the husband to get back from bowls, so we can eat it. Taste test is extremely positive. Thank you Al. Bought your Bhuna spice mix, What a time saver. Made the Bhuna yesterday using your spice mix it was the BEST BHUNA I have ever tasted, Brilliant taste. Used Chicken Livers for a change. I will be making this again. LOVE your 30 min recipes. Love not having to make tons of Base gravy anymore after using the 600g of onion, boiled and used some of the water for the curry.

I tried this recipe today, but used powdered fenugreek and powdered cinnamon. Have to say it's the best curry I've ever made. My curry game has levelled up thanks to your channel. It was very aromatic with a nice depth of taste. I'm curious about desi style curries now. Excellent work!

Love these 30min curry recipes, so do the family. Tuesday for this one.
These curries are an absolute game changer. Get good quality ingredients and follow these and you will produce curries as good if not better than most of your local takeaways. One tip i would add is that the onions are incredibly important. Either use big spanish onions that are mild and sweet or if you cant get those try using shallots it will help reduce the bitterness you can get if you use standard brown onions from the supernarket. Also boiling them first has deffo improved the bittterness!
Please please please do a video on how to make nice soft stretchy chapattis and i can bin all my takeaway menus!

Spot on, we loved it but I recommend not adding as much water if you have a domestic cooker, it took forever to thicken on an electric hob. been eating curries for decades this was restaurant grade all the family enjoyed it. Looking forward to trying some of Al's other recipes.
Fell for the same mistake...i too have an electric hob. How much water did you add ?? I added the full 500ml of onion water ...going to do it again but only adding 250ml
Just made this curry - added 1 scotch bonnet (courtesy of our neighbour) and 1tbls of the hot Patak's mango chutney. Life changing curry.....

So I've cooked the bhuna and flavours we're really nice. After splitting it into 4 single portions I found that adding each portion into a pan and reducing them down whilst reheating really took this recipe to the next level and tasted more BIR.
Just found Al’s kitchen via a friend. I’ve ordered several Smoky Jo spice packs and going to attempt the Bunah. Scanned the QR code and it brings me here. Great video and mentions spice pack. Only thing not clear is which ingredients are in spice pack and which have to be added.
I’m fairly confident in assuming cinnamon, ginger, garlic, cardenoms are all fresh ingredients that have to be added. It would help if during the video Al could do a side instruction saying this I’d when you add the pre packed spices and the quantity. Also if the ingredients in the spice mix were given a little star to a footnote just to clarify and not add double.

hello Al, the most perfect accompaniment the an Indian curry and the most popular MUST be an onion bhaji (round), i know the supermarkets do these flat but they are terrible compared to a takeaway or restaurant onion bhaji. Curries
Just made this and it was amazing. Even our baby was digging into the curry (she normally goes straight for the rice). Mine came out a bit more watery (even after reducing it for about 20 minutes) but was still really good. I reckon it's down to me using a enameled cast iron pot. If I got that in a curry house I would be happy.
Al, do you reckon you could use something like Asda "cooking" olive oil instead of the vegetable oil? We're trying to cut out as much seed oil as we can.

Al, just made my first 30 min curry and this was it. It was amazing. I like a sweet tang to added 2tbsp of mango chutney right at the end. I wonder how you could doublr this. I would to make this for a party of 8 and not make 2 separate batches. Perhaps another series with bulk cooking. Thanks again.

Going to try an alternative recipe based on your Bhuna curry mix from Spicy Joe’s. A company in Newcastle similar to spicy Joe’s seems to replace your blended onions and concentrated tomato purée with a half a tin of carrot and coriander soup + half water and a tin of chopped tomatoes. Will let you know the results, their bhuna was as good as your 30 min recipe but if I can replace the blended onion bit with the soup it would allow me the keep some ingredients to hand in the cupboard and perhaps deliver similar results. Keep up the excellent work, hope you had a great Christmas. Looking forward to more curry recipes next year, all the best for 2024!

Hi Al going to try this one today. Is the boiling of onions unique to the Bhuna as I don’t remember doing this before, although I do know that restaurants do use service onions.

Al, if you wanted to split the cooking, or maybe have it on a different days, could you stop before adding the chicken and chill or freeze the paste? Then heat it up again and continue?
